Simple Japanese snacks and pickles made from available vegetables!

🍅 Pickled Japanese summer vegetables
4 small eggplants
4 bell peppers, green pepper
8 mini tomatoes
Soy sauce 4-5 tbsp.
Water 200 ml.
Sugar 1-1.5 tbsp.
Dasi 5 years
Oil for frying 1.5 tbsp.
🥒 Japanese cucumbers
2 long cucumbers
Water 400 ml.
Salt 2 tsp
Vinegar (rice) 1 tsp.
Soy sauce 1 tsp.
Sesame oil 1 tsp.
Grated garlic 1/2 tsp.
Sesame 2 tsp
Doubanjiang or chili pepper to taste
🥒 Japanese festival style cucumbers
2 long cucumbers
Salt 1/2 tsp
Dasi 1/2 tsp
Grated garlic 1/2 tsp.
🥕 Kimpira
Carrot 1/2
Burdock root / Jerusalem artichoke / potatoes (how many carrots)
Water 50 ml.
Sugar 1 tbsp
Mirin (or sweet wine) 1/2 tbsp
Sake 1/2 tbsp
Soy sauce 1 tbsp.
Sesame oil 1/2 tbsp.
