Well, our farming season has officially started with the tapping of the sugar maple. On average we tap around 100 trees and end up with around 20 gallons of finished maple syrup. The making of maple syrup is something I have done since I was a kid in these very woods. Each year is a little different from the last but the beautiful nature of the work and spending time in the woods is good medicine, and of course filling our pantry feels good as well.
