We show snippets of how we prepared all of our different foods off-grid for Thanksgiving dinner. It was a big challenge and we learned a lot. We had a couple of glitches, but overall, it was a grand experience and the food was great!

I got to say it again. I'm just speechless, amazed.. I'm 71. I never could have done what you just did without falling flat on my face with exhaustion. I don't know if I could have done it in my '30s. You deserve an Olympic medal.

My thought, too, as I watched the preparation proceed at warp speed. I'm 74, and didn't raise a family, which is where Pam probably gained her expertise and confidence.

@@mscatnipper2359 I had 3 children and 3 step children. I still couldn't have done what Pam has at her age. AND SHE STILL WORKS 👀 maybe it helps that Pam doesn't have kids underfoot... Just Amazing

Phew! Amazing 👏👏!!! You ran a three ring circus and quite beautifully I DO ADD! Absolute perfection Pam and Jim. I second, third, fourth, fifth EVERYTHING the rest of this community said about how marvelous, fantastic, and beautiful the meal looked. Without modern conveniences you showed us just a taste of pioneer days. Off grid is so important. More importantly, to know how feed your family off grid with practice. In time, it will get easier and the weather must cooperate too. Darn that COVID! We went the rounds with it and ones health is never the same again. Sad that your son in law is down because of it. And your daughter being his nurse, thankfully your family has provisions stored. Getting back to your delicious meal Thank you for making all that food and for knowing how with practice. God Bless you with abundant blessings. Happy Thanksgiving!! We all have much to be thankful for in you two. Rest up dear friends. Thank you.

My goodness Pam and Jim….so much work. I had Thanksgiving breakfast, a charcuterie tray for lunch and a minimal turkey dinner. I was so exhausted that I fell asleep within a minute when the last of my company left at 6. The amount of work that your dinner took, the pre testing, the added pressure of making sure all heat sources were a go made this over the top. You did it for you but, more importantly, for your viewers. You demonstrated it could all be cooked off grid. I’m very impressed. Thank you and happy holidays to you and your family.

Congrats. Learning to cook off grid is a good deal of work and preparation. I have done alot of wood stock cooking and over the fire pit cooking. Love it.

Wow! Wonderful job doing that big meal off grid! I find traditional Thanksgiving dinner to be a huge amount of work! Working all week didn’t help - as you know very well! I marvel at our mothers who pulled off Sunday dinner every week, plus the holidays!!! Like you, I make everything from scratch!

WOW! That was incredible! Everything came out picture perfect and I'm sure it was equally delicious. You have made me realize we might need another method or two for cooking a larger meal. For 50 years, my family has always used Pepperidge Farm stuffing. It's just so good, we also make everything by scratch. But why try to improve on what's already great? So,Pepperidge Farm is definitely on our Thanksgiving table.

Wow! What an awesome spread! I love how you had everything planned and timed so well. As an aside, the thickener you used for the gravy is called a beurre manié - equal parts softened butter and flour combined, that is added to the boiling liquid. A roux is when butter is first melted, then flour added, and they are cooked together before the liquid is added. I like the beurre manier method because you can make a whole bunch and only use what you need.

That was so amazing!!! I'm guessing it was a bit stressful at times but you guys are such a great team. I hope you and your guests all loved it!!! So sorry about your daughter and son-in-law having to cancel. Vivid ruined a lot of celebrations this year. Thanks for sharing your accomplishments!!!

Went to my sister in law's. But I brought most of the food. I don't trust their cooking. With good reason; all the food I didn't bring was wrong/bad. One of the sisters brought ham that was still cold, one used fresh green beans for the casserole but didn't pre-cook them, and the host over cooked her turkey (luckily I brought my own) by a lot.

Pam and Jim, I don't know how to thank you for all of the knowledge you have shaped with this community. I have been looking for recipes that I could use my food storage with for years.Now I know to store what we eat and that makes sence. I wasn't sure what to do with all those beans, rice, wheat and corn. Now I know and feel confidence we will make it through the tough times. Thank you. Happy Thanksgiving.

I’m a retired renal dialysis nurse in Puerto Rico and I also got sick the day before thanksgiving. Severe achy back, headache weakness. Thank God no sinus congestion no chest congestion. Just dry cough. I inserted intravenous fluids with multivitamin. My husband was also sick. He was worse than me! I also gave him IV fluids! One thing I love about the pharmacies here, you can pick up anything without a prescription. So my brother who took 3 planes from North Dakota had thanksgiving at my moms house! I stayed home being miserable. My mom did send us food which I could only take 3 literal bites!

I use celery, sage and onions in my turkey and stuffing.

Nicely done! We tried brining the first time over 25 years ago and never looked back. One year we put the turkey in the brine, then put the pot in a cooler and the cooler in the back of our van for the drive from Las Vegas to our daughter in Salt Lake, worked out great

That Trager did a beautiful job on that Turkey. I will try your brine next time I make a Turkey it sounded great. I made my Turkey in my charcoal grill and was very pleased with the results, that was the only off grid part that I did. Your dinner looked wonderful. Bless you and Jim and your family. adding the vegetables and aromatics for the gravy directly to the roasting pan under the turkey rack is one of the most brilliant hacks I have ever seen! 💥
