Love this site. I too have a problem going through all the wine I make! The grand kids (all over age 30) help ha ha. But I make charity baskets that are auctioned to benefit our church, schools, the food pantry , civic organizations and charitable foundations. My daughter is a rummager and picks up wine related unopened things and I add cheese and crackers and cured meats to a basket from Salvation Army and wrap it in cellophane and there you have it. My friends often ask for bottles for themselves or for gifts. It gives me joy! Making it brings joy. I find it to be a relaxing hobby. Thank you for this lovely site . At 76 I am still learning . Keep up the good work!!

I just made a gallon of 10% ABV melomel with 1lb of wildflower honey and ocean spray cran-pineapple juice instead of water. Highly recommend this super easy and delicious recipe. It was lovely, and even my wife liked it despite it being dry. Thank you guys for your content. I would not be brewing if it wasn't for your videos, and I am absolutely loving the new hobby.

I don't understand how people can get upset about fortification. Why the negativity?? FORTIFICATION IS JUST ANOTHER INGREDIENT TO THE BREW. If they are upset on adding an ingredient that you didn't make. Do they make every single ingredient to their brew?? Did they harvest the honey, did they grow and harvest the sugar, and all the other ingredients themselves?? Like Brian and Derika say if you don't like it, don't make it. Not every single recipe is going to be for every single person, that is impossible. Love what you do. Got into brewing because of you. Keep it up.

Happy new year, here's to brewtifull 2024! I recently made a blackberry mead using the beast, I was planning to "step feed" but I just back sweetened to begin with loved sooo much 1.022?!?! That I decided to pasteurize it then and there (first time in the DJ) and as it was warming and I was enjoying the last of the sample I had an eureka moment this would be even better with SPICE! so I quickly added 5 all spice berries while pasteurizing OMG it is amazing the level of spice was the same as if I fermented with spices! Maybe something to investigate further. Looking forward to the fist brew of 2024, take care and stay safe, Mike

I think this is a very weird request but as someone that starting out, I think a mead vocabulary / definitions is something that is necessary. By the way, I love your videos. Great year end compilation! I have a basic dry mead fermenting here in my office now. I will have to try some of your other recipes next year. The hands down favorite wine I made this year had to be a 10%, 1.000 SG viognier. I made 6 gallons of the stuff, and through gifts and consumption through the year, I have only 11 bottles left. Second is the pineapple-cranberry wine from simple store juice :)

Happy New Years! I imagine you have a long beautiful list of ideas to try, but if it's running dry, I have an abomination of a suggestion. So we know Fire Cider exists, but I have never seen a Fire Mead, granted I do know they exist. Honey, onion, garlic, jalapeno/cayenne, lemon zest/juice, ginger root, horseradish root, turmeric and once it's stabilized add apple cider vinegar (i feel like black tea could compliment this, maybe cardamom or black peppercorns) This sounds less than appetizing to myself, but you never know.

After watching your acai mead video, I made Klingon blood wine with acai in secondary. It's so good. Dooooooo iiiiiiiiiit! If I recall correctly, Brian gave the spiced metheglyn an 11 at the one year tasting. Remember the three-yeast cider experiment I told you about 3 years ago? I've got the last 3 bottles in a slow cooker with spices, ginger, honey, maple syrup, and orange zest (from our orange tree) simmering for our NYE party tonight. The SO4 was just kind of okay 3 years ago, but it's now better than the belle saison which was my favorite at the time. There was a lot of sediment; I guess I bottled too soon. I'm so glad that you reintroduced me to home brewing!!!! Thank you and happy 2024!!!!

Brian,,, I worked out my problem with meads restarting fermentation after pasteurisation... I back sweetened after pasteurisation,, honey has some natural yeast in it,, so fermentation started up again,,, after bottling,,,, I must back sweeten,, then pasteurize,,,, problem solved.... I think wines back sweetened with sugar should be okay,,,, as sugar probably does not contain any yeast to restart fermentation,,, but to be safe,, back sweeten,,, then pasteurise..... cheers,,, happy new year to both of u Bill

I suppose it's time to stop lurking and say something. My interest for making mead was sparked by a co-worker and I was really excited to get into it. I started looking for videos to get some tips and tricks, do's and don'ts, and general wisdom. I found your channel and I fell in love with your content. The approach to mead, the style of teaching, EVERYTHING was fantastic. I probably watched 20-30 videos before I even bought all of my equipment. I'm now in primary fermentation for my 3rd and 4th batches of mead. My other two came out great (even though the second one stalled, it ended up being a happy-ish accident - I was trying to replicate the chai metheglin - only got to 9% but it's still delicious) I appreciate everything that you two talk about. I knew what my mead was doing the entire time, I knew what to check for and what my next steps were, and things that might have worried me before or made me question what I was doing didn't cause even a moment's doubt. You two are awesome, I'd give you an 11

So far I've made Tej and Spiced Metheglin. I just pasteurized my own recipe of Strawberry Rhubarb Mead and initial tasting is VERY promising. I also have a cider and a beer brewing. Thanks for providing the inspiration to expand my fermentations!

My favorite recipe I've ever followed of yours is the spiced metheglin. But this last brew is 5 gallons and although I scaled up all the ingredients it still turned out bland and extremely dry. Did you use a different yeast? Anyway, just backsweeten and pasteurize and it should be alright.

I harvested wild grapes this fall. De stemmed and heated to help with the mashing... hard little buggers to juice! Had to get about a half gallon of welches to top up my 5 gallon carboy. Added some brown sugar. Interesting. While very young, sweet and grape juicy... thought "damn shouldn't have added the welches". A few weeks later it was acidic and sour... damn... five gallons of cooking wine. A couple of months later and.... interesting. Very tannic. Very much the sour taste of wild grapes but also, oddly, sweet at the same time. Alchohol around 14 percent! Very good paired with cheese due to that sweetness. Very happy now. Thanks for inspiring me to give it a whirl! Side note... I always keep my dregs. Great for cooking sauces and gravies. A splash of mead dregs in the chilli. Cider dregs to slow cook or baste a chicken or pork roast. Yum!

I've enjoyed seeing your videos since I came across your channel. Started brewing about 16 months ago using your information as a guide. Currently have 5 items in conditioning (including a second round of Vikings Blood), and thinking about starting another in the next few weeks. Your information and style has been easy to understand and employ. Question - have you ever thought about posting your rankings spreadsheet somewhere? This would help in at least two ways. The first is that it would help subscribers choose potential brews based upon your rankings. The second is that it would consolidate your past brews in a single location and allow subscribers to browse through (or search based upon keywords) to find brews of interest to them. They could then locate the "how to" and "tasting" videos associated with this choice on your KZbin channel. I think it would be much easier to browse through such a list then trying to go through the video thumbnails on KZbin.

I had a silicone stopper squeeze right through the top of my fermenter and go directly into my brand new fermentation. I put a new air valve on with a bigger stopper. Do y’all think the silicone stopper in my fermentation will cause any problems?

BIG QUESTION - how and when do you know if acetobacters have taken over your brew? I just did a gurgly rough rack of some blackberry wine and I fear I might now have some blackberry vinegar in the making. I racked the still-fermenting wine out of a bucket at about 7%ABV into a carboy and am letting it go to expected 13%ABV. I did that cos I wasnt trusting that a couple of teatowels could hold off some buzzing insects and my usual fermenting gear is tied up on a sparkling raspberry wine mission. My logic is that if it takes a month or so for vinegar to develop, I can drink it all in that time and all's good. But if it goes to crap earlier than that, it might be a problem. Dunno if this logic works, but if it is a matter of time, do you know how long it would take????

First... you rack when fermentation is done. Second, if you oxygenated it can be turning to vinegar. You would taste it though. It takes a few weeks at least to really know for sure, but it will smell and taste like vinegar, as that's how it's made. Not a total waste, honey vinegar is actually really good!

My issue with your fortified mead was never that you fortified it. My issue was that the title of the video was misleading and when I clicked on the video I was immediately let down. There are ways to ferment that high.

If you mean the 30%, no, you cannot ferment that high.

@@CitySteadingBrews Not with normal fermentation. Only like two brewers even attempt it and they only make 1 batch a year and it’s more for show

It's illegal to home distill in the US and most of the world actually. I wouldn't call mead and wine... wash. There's an art to everything.
