I finally did it! My Nesco canner has 6 half pints and four quarter pints. First use is going to be to my Chicken A la King. You have inspired so many of us. Thank you, Bev. ❤

And by the way I love your boxer she is beautiful. And by the way please pray for my dog Rusty he took seizure real bad one Sunday he has never taken one before this was the first time. I'm glad you redid this video, probably a lot of people missed the other one. Thanks to you and Kneady (Heather) I love having home canned celery on the pantry shelf. My fridge always freezes veggies and over the years has cost me so much money in wasted celery. No more...now it is waiting for me when I want it. Plus hubby isn't too fond of it and with it already cooked and softened I can add just enough for some good flavour without the crunch factor alerting him. Thank you, Bev!

Thank you so much for this! More than 30 years ago I canned celery, carrots and onion together and water bathed it. I didn't know much about canning then, but it didn't kill us:). Not too long ago I was looking for the time for processing celery in a pressure canner and found out that you shouldn't can celery. I didn't understand because you can add it to recipes. I'm glad you did this because I'm gonna can some now. I missed having it handy.

Bev, you need to check out a celery video... Out Little Homestead, Canning Cream of Celery Soup. I thought it would be good to have on hand for recipes-- but she saved some for supper, too! My thoughts--Eww!!! But she's right-- it's fabulous!!! I canned some 3x, and we've eaten every jar as soup for a meal. I've never used any in another recipe-- it's been too precious, we had to eat it instead! Lol. It's DELICIOUS! Give it a try. 😂 ❤

And NOW it is so expensive it is absurd. I canned celery last year and was glad I did. I like to can ingredients and now that I see we are going crazy with prices it only makes sense.

Will have to try canning celery it's always in demand at our house. Thank you for being a pioneer in new ways to preserve food, you taught me how to dehydrate celery and it's been a blessing and a constant staple in so many recipes.

You need to face that fear. I also was afraid of pressure canners so I just hot bathed everything. I thought it would explode or something🤯. There are some rules to using a pressure canner but the lid locks and it has vents and it is impossible to explode. There are also electric canners. On Rose Red's channel she demonstrates using an electric canner. Watch these women canning channels and the more knowledge you get you will become more confident.

It never occurred to me to can celery because I didn't see a need. I have dehydrated celery. You did have a good suggestion to put it in dressing. I would probably put it in a pot roast or soup.

Add a teaspoon or less than that while blanching it will preserve the color

I can't believe how easy this is. I have way too many celery I haven't pull out of my garden yet. I didn't know what to do with them. I'm going to harvest all of it and can this weekend. Thanks for your video!

Just watched a quick clip of your Manitoba tomatoes! We grow them amazingly here! Nice to know you're a fellow Canadian! My hubby set up a system where he filters rain water off our roof and has set up an automatic watering system. We've had THE most abundant crop this way. Set them in the sun in barrels and they simply GROW. We use 'Fantastic' tomato variety.

Why blanche if your pressure cooking? My guess is that perhaps celery socks up the liquid so the water level gets low or maybe you can fit more in the jar?

Once I had seen you use canned celery I wanted to can some. I dehydrater a ton of it and I ground it up and sealed it in jars. I like to add celery to a lot of different dishes.

Canning lid shortage? Here's an alternative: I just came across this channel yesterday and think this may be an answer to prayers and this lid shortage. I do not normally use tattler type lids but this is genius. I do not know her but her method works using the seals and not the tattler type lids. Short video 5:36. I really like the metals lids and using the Tattler seals lets me continue to use my lids. I understand the seals are good for at least 6 uses, solving the shortage issue for me and I hope you too. I just purchase 100 in bulk of each size from Tattler and they shipped the same day. I plan on vacuum sealing the ones I do not need until I do hopefully keeping them from degrading from the elements. i think the Tattlers are better for tomato and high acid canning. Here is her info, she shows how this works: Kili’s Kitchen: Aug 15, 2020 How I open metal lids to prevent damage and reuse them - even after the seal on the lid itself is compressed by using Tattler/Harvest Guard seals.

I'm canning celery next week! I just re-watched your video and took notes!!! Thank you for your inspiration!!! Have you ever made a video about cooking chicken/turkey carcasses and canning broth? I started doing that 2 years ago. Smoked bones make a unique and delicious broth! I also add chicken feet for added collagen. I'm in Tennessee USA, and can buy chicken 'paws' at Walmart.

Why couldn't you just use the water you blanched the celery in? Wouldn't it have more flavor then just putting hot water over it?

Because the celery that comes out of my garden has a lot of dirt in it even though I wash it before I chop it and I wash it after I chop it it's still ends up with a bit of dirt in the blanching water that's why I use fresh

Hey Ken, I'm an old canner too and I think she is being overly cautious. Any dirt after 2 washings would be negligible and would fall to the bottom. She is missing some flavor.

I don't see why you'd have people upset with canning celery. Obviously it is canned with soups for retail store shelves, thus can be canned.

as always your video are amazing I have learned so much over the years, I do have one question why not recycle the water you boiled the celery in and use it in the canning does it not have a lot of the nutrients and the flavor In the water already you are adding water into the canning jars when canning.

Ok Bev, what's the reasoning in blanching it if you pressure can it? Not understanding that part of it. I can't try it this year as I have no more jars but I will try it later when I can get some small jars. We don't eat a whole lot of celery any time of the year at all except for stuffing and soups. Maybe that will change if I can it!

I would have used the blanching water to put in the jars. It has to have a good bit of celery flavor. I'm going to try this. Never heard of canning celery.

I understand the need to parboil prior to dehydrating. But, why would it be necessary before pressure canning? Thanks for all the great info !!

Because the celery I get out of my garden is much dirtier than the celery you get at the store so even though I rent it twice the blanching gets the last of the dirt

I don’t know what they do at the national center for food preservation. I have written to them and asked them questions and not gotten answers back. Except to tell me they don’t answer questions on the weekend. And then never answer my question on the week day either. But if a lot of people are trying to can celery and the National Center is wasting their time telling them that they can’t because it’s never been tested, why don’t they just test it. It seems to me that they only approve things that were tested many years ago. I don’t think anybody’s doing any new testing. I don’t even know if there’s anybody in that office. Maybe they’re sitting at home. Too many people are trying things on their own because nobody is testing them in the national center. They do refer to a lot of Balls recipes. That makes me wonder. Humm 🤔!

Bev... I’ve noticed how green your homegrown celery looks in the videos... is it that green IRL? Also, I have a rookie canning question... can I use a different brand weight on my presto? The weight is Mirro brand and it’s the kind that looks like a disk that has 3 holes in the side for 5, 10 & 25 pounds. Thanks! 💜

If it's not designed for your canner then I highly urge you not to use it look up your canner online and order the part you need don't mix and match it can be very dangerous for your health
