“Knife is life” Forge to table is my friends brand from Johnson and wales in Rhode Island. Knives are forged in China from small forge where the blacksmith was originally taught in traditional Japanese style.

Good review, well done and lots of info. For $45 to $85 you can get a real Japanese made knife with Japanese steel. Something like a Tojiro DP, Tojiro Shirogami, Fujiwara FKM, Yohinko VG-10, or a Fuji Nanihira. I always recommend a Tojiro DP Gyuto 210m ($80) if you want stainless and a western handle or a Tojiro Shirogami Gyuto 210mm ($70) if you want a wa handle with carbon steel.

VG10 is a much better steel than the other two. It isn't a super steel, but having vanadium and being a powdered steel makes it quite nice if you don't want to shell out hundreds. The addition of vanadium and the sintered powdered steel process makes for a fine grain structure that takes a nice edge and is fairly hard so the edge lasts.

If you give it a good sharpen it will cut that good, just wont hold a good edge for as long as a more expensive knife would.

I bought that famcute 2 years ago and have been using it as a full time line cook the entire time. It's still my favorite knife while the zwilling 8inch french drop point chef knife I bought on sale for 175 remains at home. Also got the 6inch vegetable cleaver from Famcute and its also still going strong. It's ridiculous how much they overperform for the price

Thank you for this video. I live in Italy and found the more expensive one at 59 euros. It is not available anywhere else, I guess your video made it a popular choice. People need this type of video made by you, an expert, because we don't have the money to buy such expensive items and you helped us find something that is not a toy or so cheap it is not useable after a little time. Also, your explanation was clear and concise and I could see that you were not trying to make the video longer so you make more money that way. I applaud your video. Bravissimo!

Relative to professional chef knives it is cheap. Quality kitchen equipment can be used for 20-30 years so the upfront cost is insignificant. You might buy a nice cast iron pot for $120 and use it for 60 years so the yearly cost is $2.

Sorry but this video is bullshit. There are plenty Michelin Star chefs using an 80$ knife as their main knife every day for 20 years. Especially European knives are cheaper but at least as good (especially German knives) as Japanese knives and for most home cooks in Europe & the US they have a more familiar shape that is easier to handle. My knife is about 220$ but it's also because I like the (Japanese) brand, I like the style and it just feels good using it. Compare it to a 80$ Wüsthof Classic Ikon and they probably are at a similar level - completely different knives with different strengths and weaknesses but equally good.

For what he paid for all of his knives, I wouldn't want to know how similar $40 stacks up to $350. A chef's knives are also like a business suit, to impress other people. My 2003 Caravan gets me to work as well as a new BMW.

No he didn't because Josh has an ACTUAL Japanese knife not from China, made my Makoto Kurosaki, these are garbage Chinese knives with questionable steel and possible lead contamination (use a kit, all 3 of my chinese "gyuto" failed the lead test) A Takamura R2 is $180-200 and shits on anything he showed. These don't stay sharp either, because it's Chinese variant of VG-10 not actually VG10. Educate yourself, use r/chefknives and read the info provided. It's like Pakistani Damascus, it's just fake garbage. ANYTHING can sharpen to shaving sharp, staying that way is proportionate to the carbon content in the steel with a few other contributing factors. OP is a great tuber, and great chef, just isn't educated in steel. Not his fault.

"Knife is Life" It's good to have a budget Japanese style knife first, before purchasing a high end one, because most people will have to learn to sharpen a single bevel blade. Furthermore, beginners may not realize until it's too late that high carbon steel knives don't bend, they chip.

Use a circular motion. You wont see it around alot but i swear by this and i literally have to warn people when they pick up one of my knives. Also you can save money by getting seventies stainless sets of serrated edges and sanding down the points with a dremel. Handles are easy if you make the knife a little shorter. Bottom line stop buying as many things and good job stepping up to DIY some stuff. Your effort is more valuable than your money.

If you get stuff that's from the few post war decades there's still a solid chance it was made here in North America and while older steel doesn't have as many cool properties neither does cheap knock off steal from mass produced modern knives. I'm super into yard saling and refurbishing stuff. The pandemic has been a bummer for that kind of thing but I'm holding out hope for next spring.

@@benbroeckx1905 I bought a wusthof just to try out a top quality knife but honestly if you're looking high end I suggest researching a local culinary store and keeping an eye out there for a sale. The sticker price of anything branded is huge compared to the actual retail cost so sales aren't uncommon. I prefer the western style of knife the blade is heavier and more rigid, but a buddy of mine has a set from Tanaka that I cooked with once and they cut very well.

If you are seriously considering a knife purchase, then read this detailed honest review: After Taku's review, I did additional research and eventually bought a starter set of four knives from Forge To Table. The customer service is outstanding. If you call or email, you will be talking directly to the owner, Noah, or his assistant, Edith, and they both respond very promptly. For you Karens and Darrens who always demand to "speak to the manager," save your breath. You are not going to get any higher than the person who answered the phone! LOL As usual, you can save a little at FTT by buying a pre-defined set, rather than individual knives. However, for each set they offered on the website, there was always one knife (or shears, or other item...) that I did not need or want. Even at a discount, I do not want to buy a set of five items when I only want three or four of those items. I contacted the company by email to ask if I could substitute two small items in a set for one larger item of comparable retail value. They immediately agreed, so I still paid the discounted "set" price, but I got the items that I actually wanted. Easy peasy. (I hope this anecdote does not cause Noah grief by generating more requests for special orders. However, while some people may like a pre-defined gift set, I would rather see them offer something more flexible, such as "Save x% if you spend $300, or 2x% if you spend $600." This would encourage greater sales for FTT, while still allowing the customer to get what he/she actually wants.) One of my knives was damaged in transit, and the tip was bent. I sent photos, and they immediately sent an RMA with shipping label (at their cost). They quickly replaced the damaged knife, just like any honorable company should do. My purchase included the 8" Gyuto, 7" boning knife, 7" nikiri vegetable knife, and the 10" Sujihiki. (Off the top of my head, I think I paid about $300, which is a screamin' deal for these four knives). I have not yet used the Sujihiki, but all the other knives have worked exactly as intended. Even though each knife has an "intended" use, that is not necessarily how it works in the real world. I often find myself looking at another knife in my collection, knowing that it was meant for the task at hand, but instead I think, "naaahh, I will just use the knife that I am already holding." Jacques Pepin does that all the time. In fact, Jacques seems to use a 4" paring knife for just about everything:) With my old set of Henckels, my go-to knife was the 8" chef knife. With my Forge To Table set, my go-to knife has become the 7" boning knife. I have carved two turkeys, trimmed three whole tenderloins, and filleted numerous fish with this blade, and it always performs flawlessly. I have also used it to cut up fruits and vegetables for the deer in my yard, and it works just fine for that too. Contrary to a couple comments I have read, my knives were very sharp right out of the box. I have honed them a little over time, but I have not yet needed to properly sharpen them, as I have only had them for about six months. I have never been overly careful with my knives, but these knives are so darn pretty that I give them special attention. I am inclined to wash them by hand and dry them immediately after each use. If I see one of these knives sitting in the sink, I think, "AHHHH! I need to wash and dry that immediately!" (If only my wife and daughters had the same thought! FYI, good habits are just as easy to develop as bad ones.) Each knife was shipped in its own wooden box with a beautiful burnt finish. The boxes are very attractive, but they are rather flimsy. Furthermore, while the boxes come in different lengths, they are not customized for any particular blade, so each knife is packed with several pieces of styrofoam and foam rubber to hold the knife in place during shipping. You would need to pay close attention to the arrangement of foam to re-pack the knife securely in the same box. I cannot imagine anybody using the boxes for long term storage, so I think FTT should find more efficient and (presumably) less costly packaging. That said, the initial look of the individual boxes is awful purdy! The pretty boxes may be a good marketing feature, but I tend to lean toward practicality. We live in a cold climate, and I actually broke up those beautiful shipping boxes to use as kindling in the fireplace. It was easy to break them up by hand. I would estimate that much kindling is worth about $0.25, but I suspect FTT spent more than that to build boxes for four knives. I have a (rich) friend who got a fancy set of knives from Japan last Father's Day, and his kids (wife) spent over $3,000. Granted, it was a more complete set, but still waaaaaay more expensive than I paid at Forge To Table. I have used my friend's knives several times, and I honestly do not think they are any better than mine. With the money I saved, I have that much more to share with my favorite charities (pendalouan.org and intoyourhandsafrica.org). Overall, I think Forge To Table sells an excellent product at a very reasonable price. I look forward to filling out my collection of FTT knives, and my wife and daughters are happy to know exactly what to buy me for the next few Father's Days and birthdays (no more socks and underwear:)). Eventually, I hope to get rid of my clunky old Henckels, which were never really satisfying. Compared to my new FTT knives, the Henckels feel like I am cutting my food with a hatchet. Apologies to my German friends, but that's the truth!

I'm looking for a good all around knife set right now... but from this video I realized that I like my knives to be individually different. Most likely getting the Famcüte Santoku and Utility knife as I already have a Dalstrong Phantom chefs knife that's been working great so far. Thanks again for this!

Nice knives. Julia Child once said, "I never use stainless steel knives, The ones my mother used were much better". I think she was referring to carbon steel. It's all I use. Carbon steel knives can be made much sharper than stainless and hold the edge longer.

I would certainly be interested in a similar video for the next tier or two knives. Like maybe a $150-$250 and a $400+ tiers? Just so I could really see the difference in an experts hands.

"knife is Life" I worked in japanese restaurant while I was in junior college 25+ years ago. I know how much chefs value their knifes. I would love to see another video about how to use it (how to cut with minimum damage to the edge) and taking care of knife. Love to see how to sharpen the knifes as well. I have seen chefs sharpening their knifes for hours. I'm also outdoor person and love all your videos.

Victorinox Santoku is hands down the best budget knife. Spend more money on sharpening stones and stone flatteners.

I agree, to fairly test the knife, not to knowing the price is key. Tester mentioned how he only has 200 dollar plus blades, which may make him accustomed to Lexus vs Toyota for one on a budget. The leather is nice, but I just need a point A to B knife. I do appreciate the demonstration. Thank you.

Very good review. I bought an $80 Japanese knife over 6 years ago. it is literally the only knife I use. This thing can cut copper cable with 6mm core x4 cables and then stick into the cutting board with the smack of the ball of the palm. Then go on cutting meat and onions like nothing happened. I have cut chickens in half through bone I have cut frozen meats It smiles back like it wants more like it thinks there is nothing you can throw at it that will give it a bad day. Look after it Buy the whet stones Buy the sheath wipe it down and wash it. (They will rust especially after cutting lemon and left over night it will show rust, don't do that)

I'm glad I watched this. I've had an eye on that middle knife for a while, but if it's blade heavy then it'll tire you out quickly quickly! I don't think I'll be picking it up now!

I just added a new comment about the knife... The damned thing doesn't have a tang! It has a knob that is glued in to the handle. The knife is currently not available on Amazon as Famcute... They switched to FINDKING... If you did end up buying it... Please be careful - it's dangerous! Don't believe me? Look at the pictures that customers have posted under the 1-star reviews.

Knife is life , I was given made in Japan Interpur stainless steel chef knife. It was used left behind in apartment where my friend is the maintenance man. It was very dull and abused but I was shocked how easy it was to sharpen I mean razor sharp edge with very little work. It has since become my favorite knife .

"Knife is Life" Started looking into purchasing an all rounder kitchen knife as I was cooking way more than I ever did in my busy (not so for a while:)) life due to the lockdown of the Covid-19 crisis. BTW, I have some old average knives just smacked thrown into a drawer...MERCY! I couldn’t believe that there’s so much that goes into kitchen knives. And that I’ve watched hours and hours of kitchen knife KZbin videos than I’ve ever even think it’s possible. Seriously, you knife guys are nuts! Anyways here goes Knife is Life! I’m waiting at my door hopefully for that give away knife so I can cut some food stuff and cook for my kids and wife ;)

Nice review! This makes me want that VG10 one. My brother got me a Famcute Nakiri for my birthday and it was razor sharp out of the box. The sharpest knife I've ever had. I'm borderline vegetarian so I use it almost every day and it's great.

Yeah no kidding. I use a Chinese cheapie I really like, we're talking $2.69 "Three Ladies"/Xuen Furen brand from 99 Ranch, but if I'm gonna go Japanese style I'm gonna get ones made in Japan. About my cheapie, my boss's family has NO paring knives so if you want to peel a radish you have to use a huge-ass kitchen knife but at least it's good and dull too... so I picked up 3 cheapies and gave them to the household.

“Knife Is Life”, I thought it was a great video presentation. I am looking at purchasing a chef’s knife at this time, so the video taught me about what to look for in a knife. One of the brands I am considering is the Dalstrong Shogun Series. However, I want the most bang for my buck!

I am left handed. My grandson and daughter bought unknowingly bought me a righted knife. I'm not going to tell them. I let my grandson do the paper test and it worked great. We had fun that's all that matters. It's the sharpest knife I have ever owned.

Hey Taku, Big fan of the videos that you've been putting out! Watching your stuff has definitely improved my filleting and sushi making skills (among other things). Be that as it may, I am looking to buy my first Gyuto chef's knife. In particular, I would like to find the best value that I can for less than $150. This video definitely made me interested in the 8" Gyuto (Japanese Style) Chef's Knife, but the knife doesn't seem to be available anywhere right now! Do you have any other suggestions? I'm an avid fisherman as well and I appreciate the input! Dan
