OVEN-BAKED CHICKEN | Sweet Potato Mash | LEBANESE GARLIC SAUCE | GARLIC MAYONNAISE
This week I made oven-baked chicken with garlic sauce, more precisely a whole roasted chicken, or even homemade grilled chicken. Nothing is more delicious than a whole roasted chicken with a mash of white and sweet potatoes, alongside a wonderful garlic sauce like this Toum, all the way from Lebanon.

How to make oven-baked chicken:
1 chicken, approximately 2kg;
3 cloves of garlic;
1 teaspoon of salt;
1 teaspoon of coriander seeds;
1 teaspoon of pepper;
1 tablespoon of thyme;
1 teaspoon of paprika;
1 teaspoon of mustard seeds;
1 tablespoon of jam or preserves;
100g of room temperature butter;
How to make sweet and plain potato mash:
500g of sweet potatoes;
500g of white potatoes;
100g of butter;
200ml of warm milk;
salt and pepper to taste;
Optional: can be strained through a sieve.
How to make Lebanese garlic sauce "TOUM" or garlic mayonnaise:
2 cloves of garlic;
300ml of sunflower or olive oil;
3-4 tablespoons of lemon juice or to taste;
salt to taste;
