I am a heart patient and I would benefit greatly from eating fish. Fish is loaded with good nutrients for my heart. Every package of frozen fish that I look at has way too much sodium for me to eat it. When I look at the ingredients, they all contain STPP. The STPP makes the sodium level five to ten times what it normally is. How can we be leaders in health and welfare of our people when we allow this wanton use of STPP just to make money on the unsuspecting consumers?

u know I have been fishing for years and I clean my own fish and bag them and put them in the freezer and 6 months later I pull out a bag of fish thaw them out and fry or bake and they are just as fresh as the day I caught them.

I bought what looked to be a nice Alaskan cod filet at my local Winn Dixie here in St. Augustine, Florida. As soon as it hit the pan, this is exactly what happened.... flavorless, mush that would not even brown in a pan. Nasty.... Sadly the second type of fish I found that was treat with TPP.

Sodium Tripolyphosphate : I came across sodium tripolyphosphate in Sam's Club shrimps , Sam's Club shrimp sells for under $19 for 3lb which is a good deal , except it is loaded with sodium tripolyphosphate , as the frozen shrimp thawing in water . ... a soapy substance rise up to the surface of the water as if it was the result of laundry detergent , I had to wash the shrimps up to five times to get rid of most of the soapy water , unfortunately so does half of the shrimps wait , in other words without exaggeration half of the weight is frozen water .

How do you remove the phosphate to prepare for cooking? Can it be done with multiple changes to the rinsing water?

Hi, though there is no way to completely remove the phosphate you can remove some level of STPP by running the fish under cold water with a gentle agitation. Please note this may affect the structure of the meat tissue.

This is true. I didn't know about this until I did some consulting work for a fish farm/packer. Lucky this one doesn't use STPP which is VERY RARE in fish industry. There are not milky stuff like shown on the video. Ask your super market to get STPP-free seafood. Siyuanfood dotcom owns farm and processing center.

If it's defrosted, soaked fish will have a soapy texture/film. If frozen, there's almost no way to tell the difference. You will also see more water drain during the defrosting process on soaked fish.

oh thank you for reading my question and replying my question. i`m very interested in seafood. and I know that most fillet have lots of H2O using sodium tripoly phosphate. after cooking fillet (in the video), fillets size is very small. i think that fillet lose water by cooking. is it right?. if equal mass of two fillet do Water content test (one soaked the other no soaked), are result different? thank you for reading my question ^_^

Makes we wonder if these so called chefs at major popular fancy restaurants are using frozen pre-cooked products for faster and cheaper cost of cooking time than fresh products that take more time to cook? I just tried some of Luby's Cafeteria new Fried Fish Beer Batter and Chips yesterday. It's taste so dry, no seasoning and very greasy! Might have that Sodium Tripolyphosphate chemical in their Fried Fish? Won't be getting that again!

+Tony Williams There are definitely pros and cons to frozen seafood, but a lot of the Frozen at Sea products are even better quality than fresh products because the freshness is preserved in just minutes. You could be right about the STPP in the fish you tried, but it also sounds like they didn't prepare it properly ;)

It’s all about greed by the company owners. You pay for ounces or pounds of salty water instead of fish. And they are harming the health of consumers as they selfishly (sociopathically?) only think of themselves and their pockets. Companies that do this to their food products need to be THROWN OUT of the food industry! One such company based in Indonesia doesn’t even put their name on their frozen packages of shrimp. I guess they don’t want anyone to know who they are. The shrimp is sold at Walmart and all it says is Shrimp Raw, Peeled, Deveined, Tail-on. I could not find a company name on the package. Don’t buy it, it is extremely salty, and it’s full of sodium tripolyphosphate. It’s disgusting.

Pollock isn't easy to find where I live and when it was advertised at a store called Supermercado El Rancho I went out of my way to go buy 4 lbs. Upon cooking it for the first time a) it had no structure when thawed. It was mushy and difficult to get into the pan. b) It began shedding copious water (as shown in the video) immediately upon hitting the pan. c) It seemed to take longer to cook. I was looking for a certain flakiness that didn't want to emerge because it was so water logged,. d) Worst of all, it had a powerful offensive bitterness that totally overpowered the flavor of the fish. I quit trying after 2 bites. I was swishing vinegar & lemon juice periodically for 2 hours after to try & get the powerful alkaline off my tongue. I plan to use the remaining fish as a soil amendment. There was NO LABELING to indicate the presence of the STTP or even added water. At least with scallops I know to look for 'dry pack'. What does one do to avoid STP or STTP in fish if there's no labeling? I'll start by shopping elsewhere but that's no guarantee of quality as I learned with the (inedible) scallops.

It sounds like you had a case of oversoaking. The FDA and CFIA require all ingredients to be listed, which includes STPP, so you have to rely on your suppliers to do their job!

The Alaskan Salmon sold at Sam’s must be LOADED with sodium tripolyphosphate! The box contains about 8 to 10 frozen salmon and each fish is individually wrapped in airtight plastic. After soaking a fish in the bag in warm or cold water to thaw then you open the bag, the fish is like much - there is no firm substance to it. When it’s cooked in a pan, it leeches a lot of water. Now I know why after watching this video. Disgusting! Eat only organic, unadulterated fish products if you want to stay healthy and live longer, which most sane people do.
