In my understanding the BZ13 is about for 90% based the BZ10 but with an improved piping system and other design. Also the BZ13 is available with a PID. It could be that the 13 has even a slightly shorter heat up time...

If you are Ferrari, which espresso machines do you have in the premises. I would say a Bezzera professional in an in factory cafe.
