Hi Chef family from New Zealand.We love watching all your videos ! Just to let you know,the "Lamb" you buy,the "Lamb" Flaps you are eating is not acturly from a lamb.Here in NZ we call it "Mutton". The exported "Lamb" from NZ, is only a Brand name. It is from a Sheep,that has grown to full maturity and size.Thats why the "Lamb Flaps" are big peices. A real "Lamb" is a very young sheep,and alot smaller in size.So the meat you are eating is from an older,mature sheep.There are many Sheep farms here in NZ and our sheep meat is exported arround the world.Our sheep are all Grass feed. But the Brand name is very misleading.It is from a fully grown Sheep.Not a lamb at all. So now you know it is not lamb.Also there is alot more fat on an older sheep,than on a lamb.That is why there is alot of fat on that meat. ...Just to let you's know the truth of what you are eating.
