Ingredients (3-4 servings)
Broth:
4 cups water (or substitute with 4 cups chicken broth if not using dashi packets)
½ cup sake
2 tbsp soy sauce
2 packets dashi (or a piece of kombu if available)
2 pinches of salt
Main Ingredients:
1 chicken thigh, cut into bite-sized pieces
½ cup daikon, sliced into thin rounds and quartered
1 carrot, sliced into thin rounds and halved
4 mushrooms, stems removed and cut into quarters
½ cup bamboo shoots, sliced
1 cup napa cabbage, chopped
3 rectangular mochi, each cut into 4 smaller pieces
Instructions
1. Prepare the Ingredients:
Cut chicken into bite-sized pieces.
Slice daikon and carrot into thin rounds.
Slice mushrooms and bamboo shoots.
Chop napa cabbage into bite-sized pieces.
Cut each piece of mochi into 4 smaller chunks.
2. Make the Broth:
In a pot, combine 4 cups water (or chicken broth if not using dashi), sake, soy sauce, dashi packets (or kombu), and salt.
Bring the broth to a gentle bubble.
3. Cook the Ingredients:
Add the chicken, daikon, carrot, mushrooms, bamboo shoots, and napa cabbage to the pot.
Cover and simmer for 15 minutes until the vegetables are tender and the chicken is fully cooked.
4. Taste the Broth and Adjust Seasoning:
Before adding the mochi, taste the broth.
If it needs more salt, add a little more soy sauce to balance the flavor.
5. Add the Mochi:
Add the mochi pieces to the pot.
Let them soften for 4-5 minutes, absorbing the flavors of the broth.
6. Serve and Enjoy:
Ladle the soup into bowls, making sure each portion gets a mix of chicken, vegetables, and mochi.
