Paat Shaak Bhaja-stir-fried jute leaf-Bengali vegetarian recipe for summer

Shaak, meaning, leafy greens is the second course of a Bengali lunch meal (the first being teto, meaning bitters). Paat shaak is stir-fried jute leaves. The texture of jute leaves is a combination of slightly slimy and fibrous (kind of like mustard greens). This particular family recipe includes ripe pumpkin and potatoes for texture, but several other variations exist.
It is usually served with kashundi which is a Bengali fermented condiment, usually containing mustard.
Jute is a crop native to the Gangetic delta. Its importance in the Bengali culture and economy increased with the setting up of jute mills in the 1800s. These mills produce the yarn that is woven into gunny sacs or burlap. Even today 80% of the world's jute is cultivated in the Gangetic delta.

This is so amazing! I had no idea that this vegetable is also used in south Asian cuisine! Previously I've seen pat shak in the cuisines of the Philippines (where it is called "saluyot"), Haiti (where it is called "lalo"), and several African countries ("ayoyo" in Ghana, "ewedu" in Nigeria, "murere" in Kenya, "crain-crain" in Sierra Leone, etc) as well as many Arab countries (where it is called "molokhia"). I also hear that one of the most popular vegetables in my country, called "kangkung" in Malay, is eaten in Bengal too, where it's called kalmi/kolmi shaak. Am now looking forward to your recipe for that, if you have one hehe

আর একটা ভাবে করলেও খুব ভালো হয়। প্রথমে শাকটাকে ভাপিয়ে জল ফেলে দিতে হবে। এরপর কড়াইয়ে তেল দিতে হবে। তেরি গরম হইয়া গেলে পিয়াজ কুচি আর অল্প পরিমাণ রসুন কুচি ভালো করে হালকা ভাজতে হবে । পরিমান মত নুন দিয়ে দিতে হবে এরপর কাঁচালঙ্কা চিরে আরেকটু ভাজতে হবে এরপর শাকটা মেশাতে হবে । উনুনের আজ একদম কমিয়ে দিতে হবে। একদম শুকনো শুকনো হয়ে গেলে নামিয়ে নিয়ে। গরম ভাতে সাথে পরিবেশন করতে পারেন এতে খুব ভালো লাগে খেতে।
