This is a Thai style crispy pork belly recipe that can be done in 30 minutes, and so unbelievably good my friend told me " You need to sell this." Also known as "fish sauce fried pork belly" หมูสามชั้นทอดน้ำปลา, this is a popular Thai street food that you can easily make at home.

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Double fry doesn't only let the meat cool down, but allows excess moisture to steam off from the breading which would normally make the crust soggy over time. After the steam escapes, the second fry leaves you with something much more crunchy and crispy with much less chance of it deteriorating over time. This is the same concept in korean double fried chicken

Fledgling Thai food cook here. I just made this exactly the way you show and it is AWESOME! I dont cook much but this is the best thing I have ever made! The sauce sends it over the top. I cant wait to try this sauce on one of my char grilled steaks. Thanks so much for your efforts.

When you double fry it stays crispy for hours even a day in the fridge and it still stay crispy.

So good! I just this following the recipe all the way to the double fried part with half of the recipe. The other half I put into the air fryer for the “double fried” part and it came pretty good still.

I just made this last night! Heating the oil to the right temp is key. First batch oil was too hot so it browned really fast. Second batch was perfect. THIS will be my go to recipe! Thank you!

Filipino here, the skin is why we eat pork belly. The holy grail of the pig is the crunchy skin. Lechon, Lechon, Kawali, Crispy Pata, Bagnet. Luv your fried chicken.

what do you do with the pork skin that you cut off? i thought you were going to incorporate it to the pork pieces somehow.. the pork skin is the best part

This is similar to how we do adobo in the central islands in the Philippines. Instead of the braise in pretty much the rest of the country, our adobo is the usual marinated pork and then fried (traditionally in lard).
