Q: I have that same set but they dry quickly on the figure not like he shows on video where it remains wet. Any thoughts ?

Remember the environment matters - especially the ambient temperature. This figure was painted when it wasn't too hot. We tried to paint a figure this way during the recent hot summer and it was virtually impossible, in cases like that, go for a "wet palette" which will keep your paints moist - also you can use "retarder" to slow the drying time. Google "wet palette" to see how to do it.

Kolinsky sable from HIstorex plus some Vallejo, Abteilung 503, Lifecolor and Andrea ones too.

Scale War Machines are these brushes easy to clean? Do you have separate brushes for different colors and/or types of paint?

Yes - very easy with water-based acrylics. Keep separate brushes for acrylics and solvent based paints or oils. Synthetic rather than natural (sable) seem to work best with solvent based.
