Welcome to my kitchen! Today, I’m excited to share with you a special recipe from Kerala’s Palakkad district - the traditional Ash Gourd Chicken Curry. This dish, also known as ‘Kumbalanga Chicken Curry,’ is a beloved delicacy in Palakkad and is cherished for its rich, aromatic flavors and the unique blend of tender chicken and ash gourd.
In this video, I’ll guide you step-by-step through the process of making this delicious curry, ensuring you achieve the authentic taste of Palakkad right in your own kitchen. Whether you’re a seasoned cook or just starting out, this recipe is easy to follow and incredibly satisfying.
Ingredients:
• Chicken pieces
• Ash gourd (kumbalanga)
• Onions
• Tomatoes
• Green chilies
• Garlic
• Ginger
• Coconut oil
• Curry leaves
• Spices (turmeric, chili powder, coriander powder, garam masala, Chicken masala )
• Salt
• Fresh coriander for garnish
Steps:
1. Prepare Coconut paste and keep aside.
2. Prepare the ash gourd.
3. Sauté the spices (cloves , cardamom,bay leaves ,cinnamon sticks, fennel seeds, cumin seeds onions, ginger garlic paste , tomatoes and green chilies.
4. Add the chicken and cook.
5. Mix in the ash gourd after the chicken is half cooked
6. Let it simmer until everything is cooked through.(don’t add water until it’s cooked well), once it’s cooked you can add water according to your thickness.
7. Garnish and serve hot with rice .(highly recommended)
