Nom plea ai is one of the most popular Cambodian desserts that you will find sold at street food markets and restaurants! Nom plea ai consists of a filling made out of palm sugar and shredded coconut that is rolled into a ball and wrapped into a chewy mochi ball.
ingredients:
to make the mochi -
1 bag of glutinous rice flour,
1 1/4 cup of water,
to make the filling -
1 package of palm sugar about 16oz,
1 cup of water,
1 cup of shredded coconut,
1 teaspoon of salt,
steps:
1. make the mochi by mixing the glutinous rice flour and 1 1/4 cup of water and knead well then cover for 30 minutes,
2. in a pot add 1 cup of water 16oz of palm sugar and melt it down then add in 1 cup of shredded coconut and 1 teaspoon of salt,
3. let it simmer until all of the liquid is gone and let it cool down,
4. roll the palm sugar coconut filling into little balls and roll the mochi balls, flatten the mochi and then add the filling, roll back into a ball,
5. in a boiling pot of water add the mochi balls and when they rise up they are ready to be taken out,
6. place it in a large bowl of cold water to let it cool then take out the balls once they're completely cooled down,
7. serve and enjoy with more shredded coconut on top,
