When I lived in Colorado Springs back in the seventies, you couldn’t find fresh veggies, corn!!! All I saw was beef and more beef!! Which I love but buggies would have been nice!!! My husband at the time was in the service at Ft. Carson at the time... it’s nice people are growing veggies now!!!! Great video!!!

I'll have to make my squash this way next time. I grilled them over hot charcoal earlier this week, but they really needed that tomato concasse to amp up the flavor. I'm turning the leftovers into a squash soup. I'll try your method next time!

Sonny and Uncle Justin, sorry to disagree and to jump into a comment that's not mine, but salsa means 'sauce' in Spanish and Italian so not everything is 'salsa' I wonder why are people calling salsa things that are roughly chopped, like 'mango salsa' when I see big chunks of it on a plate :( ... By definition sauce is a liquidy substance or combination of ingredients or is this wrong? ...

Just attempted with zucchini (what I had on hand). Now I know why I never got into cooking with deep oil or even shallow! Ha. Too impatient so didn't have oven at highest temp when they went in...but definitely a custardy consistency and tasty. Didn't have tomato anything so eating with sour kraut on bed of my mock hamburger mix. Filling and something new! Covid19 has meant challenges on the eating a variety of foods front. Thanks for your veggie dishes here, much appreciated!

Why do you Not cut off the bottom ends of the Squash or the Tomatoes? That little ugly small piece of stem at the bottom end. I always have in the past. That applies to any vegetable. Also, did you cut off the Top and Bottom of the Shallots before diceing?
