Creole, read the seasonings and pick what you like, then buy those, no salt. Triple Tail is a wonderful gormet fish. you don't need to cover it up with creole. My preference is to taste the fish, not the creole..some like it over seasoned which takes away from the wonderful sweet taste of the triple tale. Triple tale is only available spring, summer and fall. It is quite expensive, so unless you can catch it in your back yard, please cook it accordingly.I use salt, pepper. nothing else.

Is that a special creole seasoning? Or can you recommend a brand? Looks delicious. I just caught a few triple tail in Lake Bourgne yesterday.

Creole available everywhere. It is very salty, so I would recommend you don't season with creole. It will come out wonderful if you follow the directions and use the juice of one lemon and a half stick of butter. Salt and pepper...add oil and a pat of butter to pan...sear on one side and then bake. I don't know how many people this chef is cooking for, but his lemon butter is a pan full. This is a basic lemon butter sauce...for shrimp, fish, any seafood. Add a bit of garlic if you like also.

you don't need that much butter sauce, I would half it for 2-3 servings of fish, but this is delicious!!
