This is my quick and easy recipe on how to cook a pan seared lemon butter salmon!

INGREDIENTS
2 skinless salmon fillets
20g unsalted butter
1 tbsp olive oil
1 lemon
Salt
Black pepper
METHOD
1. Grate lemon zest
2. Squeeze out the lemon juice
3. Pat the salmon dry
4. Season both sides with salt and black pepper
5. Cast iron pan with 1 tbsp of olive oil on a medium heat
6. Pan fry for 3-4 minutes
7. Turn over
8. Cook for 2 minutes
9. Add unsalted butter and the lemon juice
10. Turn over once more
11. Baste for one minute
