A classic and very simple spanish seafood dish.
Ingredients:
- Squid (1)
- Garlic (3)
- Olive oil (to taste)
- Cayenne chilli small dry hot chili (1)
- Brandy or Cognac (1/2 glass)
- Salt to taste)
- Black pepper (to taste)
- Paprika -sweet or spicy, to taste-. (1 teaspoon for dessert)
- Water (half a glass)
- Fresh parsley (to taste)
Garnish: Lettuce, onion, roasted red pepper salad, salt, pepper, vinegar and olive oil.
Preparation:
- Clean the squid from viscera, feather, mouth. I like to leave the skin on it but if you want you can remove it.
- Separate the tentacles and the siphon.
- Make a few cuts to the squid -only on one side-.
- Peel and chop the garlic into small pieces.
- Put a frying pan over high heat with a little olive oil.
- Add the garlic, the chopped cayenne pepper and the squid.
- Let the squid brown on both sides.
- Pour in the brandy and set it on fire to remove the alcohol.
- When the fire goes out, season the squid on both sides.
- Remove the squid to a plate.
- Add the paprika to the pan and before it burns, pour a little water, letting it evaporate a little to obtain the sauce.
- Make the side salad.
- Serve the salad with the squid.
- Add sauce to your liking and a little chopped fresh parsley.
