🥞 Banana pancakes with berries
🍪 Pancake dough:
200 gr banana (2 bananas)
100 gr eggs (2 pcs.)
40 grams of cane sugar (1.5 tbsp. L. With a slide, can be replaced with white)
100 grams of rice flour (4 tbsp. L. With a slide)
6 g baking powder (no flour, starch)
salt
100 grams of fresh black currant (3 tablespoons, or raspberries, blueberries)
or 50 g dried blueberries (2 tablespoons, or raisins)
cinnamon or vanilla - optional
🍨 Let's make the pancake dough (2:25).
✅ Put bananas, eggs, sugar in a bowl and beat with an immersion blender or mash with a fork until smooth.
✅ Combine rice flour with baking powder, add salt, stir.
✅ Transfer the flour mixture to the banana and beat again with a blender.
✅ Add berries, fresh or dry, and stir gently.
✅ Fry the pancakes on both sides in a non-stick skillet, covered. You can take a regular frying pan, grease it with a little vegetable oil.
🍓Decor:
fresh berries (raspberries, currants, blackberries, blueberries)
20 g icing sugar
