Ingredients:
- 1 cup yellow split pigeon peas (toor dal), washed and soaked for 30 minutes
- 200 grams paneer, cubed
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1-inch piece ginger, grated or finely chopped
- 3-4 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons oil or ghee
- Fresh cilantro leaves for garnish
Instructions:
1. Cooking the Dal:
- Pressure cook the soaked toor dal with 2 cups of water, turmeric powder, and salt until soft and mushy (about 3-4 whistles). Alternatively, cook in a pot until tender.
2. Preparing the Paneer:
- In a separate pan, heat 1 tablespoon of oil or ghee over medium heat. Add the paneer cubes and sauté until lightly golden brown. Remove from the pan and set aside.
3. Tempering:
- In the same pan, add the remaining oil or ghee. Add cumin seeds and let them splutter.
- Add chopped onions, green chilies, ginger, and garlic. Sauté until onions are translucent.
4. Adding Tomatoes and Spices:
- Add chopped tomatoes and cook until they turn soft and oil starts to separate from the masala.
5. Combining Dal and Paneer:
- Add the cooked dal to the pan along with red chili powder and garam masala powder. Mix well and let it simmer for 5-10 minutes, adjusting consistency with water as needed.
6. Final Touch:
- Add the sautéed paneer cubes and cook for another 2-3 minutes until the flavors blend together.
7. Garnish and Serve:
- Garnish with fresh cilantro leaves and serve hot with rice or roti.
