would doing exactly as you've done here, but with an unequal number of yearly data for each entity still work? (e.g. entity 1 has data for five years, entity 2 has data for six years etc.)

What if instead of using fixed-effects or random-effects models, we just use Pooled OLS using transformed data (log variables for instance to remove heteroscedasticity)? Would this approach work?

No, that won't work. The problem is not heteroscedasticity as much as HETEROGENEITY.
