I have a hard time finding anyone making panko with electricity in the first place, most of what I find are people using normal bread and cutting the crust off lol

These are great, thank you for making these vids and explaining the working process, couldn't find any other actual legit panko guides, all the others are just workarounds and not authentic

Try a lower hydration in the dough, 65% is what I have read on other sites. Also, yes cool the bread in the fridge to evaporate the moisture and then use a food processor to grind, then they are lightly toasted (using hot air) to remove more moisture to prevent mold.

I was thinking maybe the internal formation could be oriented differently if you put the wood frame flat on it's side and let the ends be open but place the insulation sliders just barely into the frame so the bread doesn't have to 'push' the forms along which compresses the bread air pockets. This way the bread doesn't push against the hard bottom on one end, it grows easily outwards from both ends with little resistance, and gravity will help reorient the internal structure of the bread from length-wise to thickness-wise.

Attach the bottom of the grater bowl to the grinder. Make a circular shredder top. Grind the panko into the catch as it rotates.

I have a cheese grater attachment for my stand mixer. It has a square lug that attaches to the mixer, but you could chuck it in a lathe, make an adapter for an angle grinder, etc.

Fantastic series, I have an 'auto grater' which was a gift that is pretty much a cheese grater attached to a camming motor, useless for most stuff besides making fine shavings of meat for hot pot which I could already do a better, less messy job with my slicer but maybe you can find inspiration from that.

Awesome video! FYI, most food processors come with a grater attachment, which may solve the grating issue...

Excellent. On the basis you said "it cooks from the inside out" I wonder if a similar result can be achieved using a microwave. Mind you, the automatic end-of-cooking which occurs in your setup by the bread shrinking away from the plates would not happen.

Microwave ovens don't really cook from the inside out - although the waves do penetrate the surface a bit, they are still preferentially absorbed by the outer part of the object being cooked.

Wonderful videos there on diy panko breadmaking. For a better way to grind why not a top feed food processor with a grater blade with a light feeding of the bread? Although I can also think of ways to rig motorized holder for the bread duplicates the manual grating over the hand grater. The top of the holder being movable downwards, and kept under a constant pressure. A bit of making involved there. But if you bother to make an oven why not a powered grater?

The models have changed a bit but this is the closest to the one I have: carroll-meynell.com/variable-transformers/item/carryvolt-9a-mvtc-uk9a 9A output is massive overkill unless you want to cook an enormous loaf, 5A would be plenty. The voltage and current meters are very useful. No idea where you are in the world, try RS maybe? uk.rs-online.com/web/p/variacs/8902878 Obviously they are very expensive new. I got a second hand bargain, maybe hunt around on ebay for something that suits your needs?

Sure, I don't see any reason why you couldn't put meringue in a lathe. Please speak to your tooling supplier about what inserts would work best.

Hilarious ways of turning bread into breadcrumb. :D maybe some way of pushing bread into spinning blades, similar to a juicer or garbage disposal? Does the bread taste like normal bread without the crust?

I was wondering about installing the angle grinder into a big box with a slot through which I could feed the bread... would be more controllable, and would probably contain most of the crumbs! Yes it basically tastes and smells like the middle of a baguette.

@@funksterdotorg My food processor has a little push stick for when I use the grating blade with cheese or root veg. You're basically describing that.

Wow, wish I hadn't thrown out my old paper shredder. I could have possibly probably repurposed it for Panko shredding. Might have to make more than one run through though.😂

Basically no, the dough stops being conductive due to moisture loss before it reaches caramelisation temperatures. Just bake it in the oven, eh :o)

400g strong white bread flour, 300g water, 8g salt, yeast quantity depends on type (I used ~4g dried yeast, activated in the water beforehand)

I have not. I suspect it might be tricky to get a consistent crumb size with a hammer...

@@funksterdotorg Not sure if it will work, but what if you tried to put two spacers (smaller than the hight of the bread) on the table, put the bread in the middle, put a board on top of the bread and hammer the board?

It might work! One might also put the bread between two boards and squish them together in the vice. However I think for Part 3, I might try to build something a bit closer to how it's done in industry (but at a very small scale).
