Panta Bhat || (Fermented rice)
Panta Bhat is the fermented form of rice. It is a centuries old recipe consumed in the month of Summer. It is the epitome of comfort food especially in West Bengal, Odisha and Assam. This is loaded with nutritional content and aids in digestion.
Ingredients....
Cooked rice (small grained),
Fried Red dry chilli 4 to 5 pcs,
Green chillies 4 to 5 pcs,
Onions (sliced)
Side dishes....
Alu Bhorta/Chokha, Alu'r Chop,
Onions,
Green chillies,
Gondhoraj lebu and Fried Red dry chilli
Fried fish
Chingri/bori makha

Have a question. If cooled cooked rice is kept soaked in water overnight, how does one know if it is fermented by morning? What are the signs by which one knows it? If I get an answer, it will be very helpful. Thank you.

Hello Friend, This is an interesting question. As such there are no specific sign, but you will find the rice to puff up and you will get a slight fermented smell while eating.😊 Hope this is helpful.

Thanks. Whenever I ate পান্তাভাত, I never felt it's fermented. Will try this time. But what rice will be perfect for that, I guess I have to work out.
