My favorite panrty /fridge meal is burritos. I recently thought myself how to make flour tortillas from scratch, my pinto beans go into the crock pot over night once the tortillas are made and cooked on the stove, the beans are done. For the fridge it's cheese and salsa you can assemble the burritos so yummy.

Love the video! The sour cream chicken almost reminds me of a recipe for poppyseed chicken from when I was a kid. It's just sautéed chicken breast seasoned with salt and pepper, with sour cream and a lot of poppyseeds to make the sauce! I serve it over egg noodles and the secret is crushed up Ritz crackers on top. It's also super yummy if you mix in roasted cauliflower!

I decided today was the day to clean out my pantry and felt terrible about all the expired things in there I had to throw away. I saw several cans that will expire in the next couple of months and I thought, Mindy, what can I make with these things to use them up. I know if it were your pantry, you would have 100 great ideas. Have so much fun at the beach - my happy place!

Canned food doesn’t really expire for years - I use it way after the stamped date.

I tell the kids that if we waste its like taking a dollar bill or $5 bill crumbling it up & throwing it in the trash! 😝 I try not to waste anything!!! Glad y’all are going on a fun trip!! Have fun!

Oh wow, i just watched this video yesterday and I made the chicken dish with the tomato cream sauce for dinner and wow! It was so delicious! I only had 1 big and 1 smallish breasts and it was enough but I think shredding it would have made it stretch more. I served it over rice with a side of green beans. I love your ☺️ cooking videos!! Thanks for what you do Mindy.

I was going to adapt the sour cream chicken recipe into sour cream pork chops for dinner last night, to use what I had on hand. Then I decided to bake the pork chops & make the sour cream sauce as a gravy for them, since the pork chops were too big for my skillet (Sam’s Club huuuuge pack of meat, lol!). Then I decided, hey - why not use the sauce as a gnocchi sauce? So long story short, if you make just the sour cream sauce (with tomatoes instead of peppers), & add an extra half cup or so of water, you can drop in uncooked gnocchi (I used gluten free spinach gnocchi, from the back of the pantry) & it’ll cook up beautifully in just a few minutes. Then take it off the heat & add your sour cream (omit the flour, the gnocchi starch is a thickener), & voilà! It’s actually hearty enough to stand on its own as a thick soup, but I served it as a carb alongside our baked chops & dipped the meat into the sauce. Huge hit!

I got a bottle at Christmas and found it salty, but was only like that first time I used it because I thought maybe salt settled to the top, shook it good and am very happy with it now.

It’s a way for me to earn from my platform and support my family at no cost to my viewers, all my content is still free to the viewer. I spend about 50+ hours a week on KZbin, it’s a full time job now. I get dozens of inquiries every month from companies who want their products featured in my videos. I turn down about 95%. I’m pretty picky. 😊 It has to be something I like and use or I think my viewers could benefit from. I have a lot more control as a creator over sponsorships than ads that run during my videos.
