We are doing a pantry challenge, Cooking From Home for 2 Months to use what we have stored up over the summer months and because its fun to see what you can come up with from food stored in the pantry. Its a cold and icy week here in the PNW but the home is warm. Come join us this week as we share our weekly meals with you and hopefully you walk away inspired to grow more food from your own garden and store up in your pantry.

King Ranch Casserole
grilled and chopped on home grown chicken
2, 10.5oz cans cream of mushroom soup
2, 10.5oz cans cream of jalapeño soup
1, 10oz can of Rotel diced tomatoes & green chilies
1, large sweet onion, chopped
2, jalapeños, seeds removed diced
1, lb freshly grated cheddar cheese
1, TB Meat Church Texas Chili Seasoning
4-5 handfuls of crushed nacho cheese Doritos
12 tostadas
Topping with 1 cup of cheese
bake till golden and bubbling at 350 about 45 min.
Italian Zuppa Soup
5 strips of bacon (thick cut works best)
▢1 pound Italian sausage see note
▢1 medium onion chopped
▢5 cloves garlic minced
▢2 cups chicken broth (beef works too)
▢4 cups water
▢4 large red potatoes diced (leave skins on)
▢1/4 teaspoon Italian seasoning
▢1 cup heavy/whipping cream
▢1 small bunch of kale torn
Brayden's Pasta
3 cups Flour
1 1/3 cup semolina flour
1 Pinch of salt
2 egg yokes
5 eggs
a touch of olive oil

I agree, cooking from scratch is the BEST! I soon find family favorites that I can count on and know that it will all get eaten. I love cooking at home. Plus, it is so expensive to eat out now days! It all looked so delicious!

Encouraging my son to cook was one of the best things I ever did. He is now the primary cook in his home, and we are often invited to sit around his table enjoying delicious from scratch food. My granddaughter and I have now continued that tradition of developing a love of creating our own food together. I LOVED this version of your channel this week. Happy to see more of it❤

Thanks for posting the recipes! Beth you are a tremendous cook! Your whole household can cook too. How truly wonderful! I think your cooking has an elegant gourmet edge to it! Your son Brayden did an amazing job! His sauce looked so deliciously inviting! ❤ I’ll bet you all enjoyed it! Caroline, its always such a pleasure to hear from you, never apologize. Brayden and Rilley both love to cook and bake, I feel like if that is one skill i can pass on then I have done my job. Thank for hanging out with us!

This was really fun, Beth! It was perfect timing because sure I’m getting ready to organize our meals for the week. 😉 I loved all the recipes and I agree… I started roasting chickens, as I began my “home cooking” journey (much later in life). Have a great day!

All of the dishes looked so yummy! Beth you are a great cook! I was especially impressed by Brayden making pasta from scratch. And the meat sauce looked so tasty! To choose one over the other is most difficult! So I’ll just leave it there. I must say I really love the apple cake too! You have a wonderful family! The sweet peas will all have been planted by now. It will be beautiful!❤God bless you and your family

I grew up in the South. I learned to cook from black Southern women including my mom, a home economics teacher, and my grandmother, Miss Bessie. Miss Bessie owned a general store that included a deli section. Of the dishes you made on this video - if I have to pick just one - it would be the pasta making. But they all looked scrumptious.

When your son found the buckets from the pantry I thought You had Norwegian fermented fish #rakfisk in your pantry😂😂😂. The noodles Looks fab! I need to start buying flour in bulk!

Everything looked delicious and thanks for sharing the recipes! I cook just about everything from scratch as I really do enjoy it. I also make an Italian soup like yours and it is one of our favorites. Next weekend I'm going to spatchcock a chicken. I have never done that before and am excited to be doing it! I have enjoyed that you expanded your channel to also cooking! You and your family have given me some good ideas. Have a great week. It's suppose to warm up here...up into the 40's!
