We have started with the pantry challenge and I'm making a few snacks and sharing meals we made this week!
Tutorial for sourdough bread: • How to Make HEALTHY So...
Breadsticks:
200g starter
750g bread flour
250g wheat flour
820g water
after one hour add: 30g water & 20g salt
Seasonings:
1t. salt
1t. freeze dried basil
1/2t. oregano
1/2t. garlic scape powder
1/2t. garlic powder
1/4 cup oil or butter melted
Cook at 400F for 20 minutes. Add 1 cup mozzarella & parmesan in the last 5 minutes of cooking :)

Good job on rescuing the produce. Especially celery. I have a hard time growing celery. Beyond impressed in your son’s abilities in the kitchen! My goodness, I don’t think I blinked just watching every move. I am 54 and have never been successful at baking, but this young man has got it!! ❤

To anyone who doesn't know, broccoli leaves are delicious!! Eat them like greens, but the cooking time is only a few minutes. Also in soups. Also dried and crushed for protein shakes, and any combo drinks for quick and easy fruit and veggie mix drinks. This year I'll grow more to make some broccoli green chips like kale chips. I'm betting that they will be delicious too. 😃

Being proficient at cooking and baking is something I wish I had been taught growing up but given my past and what the circumstances were then. I’m 25 and know like 3 basic meals so I’m trying to learn as much as I can from your channel as well as others who I know that have this skill.

Haha!! I do like to stay busy with homesteading projects because it helps my mental health! I think making it into videos sometimes makes it seem more busy than it is in reality. We are normal and take breaks too 😉

It is funny how when you teach children learn. My father initially did not want my brothers to learn how to cook but my mom said "NO!" they will learn because if they live alone, she wanted them both to know how to cook and not go out to eat all the time. Be healthy. My brothers are excellent cooks. I call one the Pizza KING. His pizza can rival any restaurant. It's that good.

Been making whole wheat sour dough bread for 10 years. I grind my hard red wheat berries with my solar grinder, mix it with my solar mixer and cook it in my solar oven. After grinding my wheat I keep the flower in the freezer until needed. The only ingredients in my bread is flower, water and sour dough starter. To me it is the best bread I have ever had. My wife and myself have one slice of the bread each day with humus and avocado. OK, I admit that all appliances in my house are solar powered by my solar system when I am switched to off-grid.

GREAT video. I have tried EVERY recipe under the sun in order to say that I gave kale a fair shake. In the end I know that I just can't STAND it. However, I have discovered that I am crazy about Swiss Chard. I would not have known this had I not tried to find a stand in for the K**E 😅.... Thanks for the inspiration! I'm on Day 15 of my own pantry challenge of having at least one significant meal a day come almost entirely from the pantry. It helps stave off mid-winter complacency and has already dropped our grocery bill to a pittance this month. Hope you didn't get hammered too hard. I pulled all my root vegetables before the cold hit, glad I did.

Great job with following the Pantry Challenge and amazing how many carrots you saved. I am trying to grow carrots again this year I don't know what I am doing wrong they grow but when I harvest they are tiny little nubs this year I am trying I believe the brand is called Ronson from Berlin Seed Company here in Ohio.. another you tuber who is here in Ohio says they grow better in Ohio soil. I can't wait for spring planting such a long way off yet for Ohio. Your son was very confident in his baking great job and using things grown by your family. Anna In Ohio

These are my fave Seasonal Homestead videos! This past Thanksgiving, when I did my biggest harvest of Collards, there were some unlabeled Broccoli plants that hadn’t produced heads yet and the leaves looked exactly like one of my collard varieties but slightly bigger. I harvested them with the collards and they were delicious. Fast fwd to late Dec, the broccoli plants continued to grow and lo and behold, they produced broccoli! That’s when realized I cooked broccoli plant leaves with my collards on Nov. I will never NOT do that! I could not tell the difference!!

Incredible and beautiful and inspiring! The produce looks so healthy and tasty. Your eye for design is very calming and I can trust that I can let you guard down and take in all the good instruction. My greenhouse is dry and bitter. It makes a big difference to have people like you to inspire us gently to do better. Sometimes we can be our own worst critic.

lol I wish I lived in a place like you do…my town has 1 grocery store that is high priced on normal products and “ok” on sale. Once in a while I’ll drive for an hour to get to the small city near me and do a little better. I still agree with the video…but I’m still paying double what you seem to lol. La Croix (or any carbonated water) have become my healthy replacement for pop (or soda I guess you say) ….it took a while to adjust but now I like it. All sorts of flavours since they’re more like hints of a flavour than actually tasting like whatever. I do find the various brands differ quite a bit, bubble size and strength as well as how natural or fake the flavours are….but all a great way to still enjoy a fizzy drink without the sugar or sweeteners.

Long time follower here so I feel like I have a really general understanding of your values for healthy nutritious food and providing the best for your family. I recently came across some information about much of the Himalayan salt on the market testing for heavy metals and contaminants because it's not super regulated. A lot of resources suggest Celtic salt as a better option. Only mentioning it because I noticed you were using Himalayan salt in your bread and it might be worth looking into!

GE Cafe ovens. One in induction, one is regular electric.

I was wondering if you could please tell me how much starter for the breadsticks? Is it 200g? Thank you for all the wonderful content. I've only known of your channel for about a year now but look forward to your uploads. My name is Chris. My family and I are Canadian, but living in Qatar. Watching your incredible gardening definitely reminds me of home!

Wondering about your chickens. Do you leave them Out in minus temperatures? Asking as we are getting chickens and wondering about the cold.

We make sure their coop is blocked from the wind, and we put extra hay in the roost so they can be that much more insulated. If done right it’s actually pretty warm in there roost with the body heat they all put off 👍🏼
