I love how polite your are to address viewers as big brother or sister . So keeping with our Khmer tradition of being respectful. Great job with explanations of why things must be done a certain way or else fermentation of beef can go wrong.

4 tablespoons usually is 1/4 cup of the salt but use tablespoon for sure and use the amount of the same beef for better results

Chanthy Phan as for authentic fermented we never add garlic when we make this. If you need to steam like fish or pork you may add some garlic to it . But you can try for your own preference.

You can’t if you prefer tough texture in meat. You just need to do like the pork . Try it
