The little doors were probably used as a serving hatch leading into a dining room. Very common in British-style large manor homes at the time.

Hey man i can say that place is well haunted, i used to live in that top floor of the main house for years growing up, we were caretakers. Was pretty fun as a kid in that place. shame you didn't get to tour the whole property man.
