We Filipinos used to eating with our hands as well, especially with fingerfood like Seafoods, and Chicken, but normally we eat using Spoon and Fork we don't use steaknife because we usually eat with soup and casserole as viands and we cooked our meats tender grilled or fried, so no need for a knife. Tikoy is a desert, brought by the Chinese since the 1800 of Spanish occupation. The tikoy you ate is with a Filipino twist so that makes it a Filipino dish or desert.🤓

But there is such a big Chinese Filipino community in the Philippines. ...tthey've brought their culture and food over from China, and Filipinos have loved it as if it were their own. I had a Russian friend back in 2012 when I worked as hotel staff at Rough Rider's Hotel in Medora, North Dakota. He said that he and his girlfriend live here in Mindanao. I can't remember his/her name anymore. Maybe because you know that person too. Anyway, just enjoy your stay there, and you are welcome in ALL the provinces. Long live, fellow countryman! We do grow potatoes in the Philippines and a lot of Philippine dishes have potatoes in it. It only depends on every household or family maybe or even provinces if they cook with it a lot. In my family we would buy 5 to 8 kg of potatoes every week. We would make omelette with potatoes, menudo, mechado, afritada, mashed potatoes, boiled potatoes, potato salad, fried potato chips, the dishes are endless. It just depends on every family cooking tradition. So yes, we do have a lot of dishes with potatoes included.

'Moron' is one variety of 'suman' , a real native desert here in the Philippines. It originally comes from 'Leyte' province, in the Visayan region of the Philippines. By the way, tikoy isn't really a native filipino desert, we just inherited it from our chinese ancestors.

Sheep are not indigenous to the country so we dont have lambs available but are substituted by goats though. Goats supply our white cheese too. While tikoy on the other hand is chinese but adopted into the Pinoy food table on their new year's celebration(chinese-filipinos)

You can try banaba tea or salabat. Banaba tea is made from the leaves of the banaba tree. Salabat is made by simmering sliced ginger in hot water. They are considered medicinal. But salabat is probably not good to drink at this time because the weather there is too hot.

Buckwheat is delicious and I prepare it like rice in a pot. Also, cold noodles (aka soba) Japanese style. I experimented with buckwheat to make therapeutic hot packs.
