You totally wasted the parrotfish. They died for for nothing. The delicate flavour and flesh of this fish was totally overwhelmed by the crispy onions and mayo. Please please just quit man. PLUS you encouraged and will continue to encourage the loss of this fish and its contribution to marine ecosystem. I quit eating this fish only to see this horrible video.

This fish is called an “Uhu” in Hawaii. Typically caught through spear fishing but possible to catch it with a rod. We’ll usually bake the Uhu stuffed with lup cheong sausage, mayo, and pretty much whatever else you wanna use.

I’m a Florida native and love these guys. You’re it allowed to fish for these to eat but can be kept for pets if under 12”. I have eaten them before the laws changed and the ones under 12” taste almost like a mixture of crab and lobster.. they have a dense firm texture but also quite delicate in form and flavor.

1: those parrotfish are caught from sand flats, not reefs, the coral chomping ones are a different species. When preparing white fish or any raw preparation fish, scale it before. Cutting the flesh with all that shit is both unsanitary are will destroy your meat. The best way to eat parrot fish is sashimi with scalded skin which is textural due to the lack of flavor. Eat it with ponzu and mitsuba

in my experience for parrot fish, because of the scales, we usually either scale (de-scale) the fish first or skin the fish first (cut under the skin to remove it, in order to cut the sushi/sashimi pieces. this reduces damage to your knives and risk of cutting yourself because of the scales.

Hey I came across your channel a few days ago I subscribed of course I've been in the restaurant business for 16 years and love cooking. As someone who shares a interest in cooking (seafood is my favorite especially because I only eat what I can harvest/catch) a little tip with big scaled fish try scaling it next time way easier and won't be so harsh on your knife. Also in sushi it is a must to scale fish I got yelled at for that a couple times lol. Love your channel I'm learning alot. Keep it up chef
