Dear Roxanne I made it as per your specifications but the kababs in the second round split open. Any recommendations or suggestions why it may have happened?

This is odd, it shouldn't happen specially in the second round because the oil is hot enough. Maybe try putting the remaining batter in the fridge to cool while you're frying the first batch? I've noticed it holds a little better. Also try keeping the flame to a medium or low perhaps the oil was just too hot? Also I hope you don't move the kebabs once they're in the pan. For the first maybe 4-5 mins I don't touch it at all to flip or anything. If you keep touching it till they slightly firm up it will spilt for sure.

Roxan many times my kabab cracks while deep frying, i put one egg, should I put two? Then it will not break? Please give me your tip

Yes it does happen sometimes. Please check if the oil is hot enough, sometimes if it isn't hot the kebabs tend to crack. Also yes pls add one more egg and see. Sometimes the eggs we get are really small so if you think it might need more binding add half more and one more egg n check. Hope this helps 👍🏻

If your oil is heated and the kebabs are approx this size even smaller yes ten mins works. If you're unsure you can always cook it for longer. As the oil heats it cooks faster. Do a full ten mins with a timer and check as per your liking, can do a test with one n see 👍🏻

See the egg is a binder. if there isn't a binding agent then the meat tends to crumble and disintegrate. Try a small batch without egg in hot oil and test it. If it works for you then super otherwise you might need the egg.
