Hello Everyone, my name is Marie Francois.

I have always had a deep love for cooking. There’s something special about it that gives me joy.
My goal is to encourage my Haitian-American young adults to enjoy cooking.

Baked Red Snappers
INGREDIENTS:
FISH AND SEASONING:
2 medium fish scaled
3 limes, halved
3 tbsp. lemon juice
1 tsp. onion powder
1 tsp. Of ginger powder
1 tsp. garlic powder
1 tsp. Maggi Chicken Bouillon (optional)
2 tbsp. seasoning base/ epis/ sofrito
½ tsp. sea salt
1 tsp. Lawry’s seasoning
½ tsp. “Sunshine by Tabitha Brown” All Purpose Seasoning
½ tsp. “Like Sweet Like Smoky by Tabitha Brown” All Purpose
Seasoning
½ tsp. dry thyme
½ tsp. habanero sauce
2 tbsp. extra-virgin olive oil
non-stick cooking spray
SAUCE:
2 tbsp. extra-virgin olive oil
2 tbsp. fish sauce
2 tbsp. cooking red wine
½ whole green bell pepper, cut into rings
½ whole red bell pepper, cut into rings
1 medium yellow onion, cut into rings
Tool Needed:
*9”x13” Aluminum Pan
DIRECTIONS:
1. Descale fish. Then, marinate it in lemon and lime juice for
20-25 minutes. Rinse them with cold water.
2. In a small bowl add sofrito/epis, habanero sauce, and all
dry seasoning. Mix well.
3. Bathe fish in the seasoning mixture. Then, cover them with
plastic wrap and refrigerate for 4 hours to overnight.
4. Preheat the oven to 375º F
5. Grease the aluminum pan with extra-virgin olive oil.
6. Place your seasoned snappers into the pan. Spray the fish with the non-stick cooking spray.
7. Bake the fish for 35 minutes.
8. Spread pepper, onion and sauce over baked fish.
9. Bake the fish for another 10 minutes.
10. Serve baked fish on a platter with, fried plantains, rice
and beans, or any of your preferred side dishes!
