been making chex mix in a nesco roaster for years, i don't fill mine up as full as you did though, i shoot for about 2/3rds full for the same reason you discovered, it's easier to stir. i also heat my butter mixture enough to boil off the water so the wheat chex doesn't get chewy. overall it's a lot easier than using a conventional oven and the results are the same, plus i can make a batch of the stuff anywhere i have an electrical outlet.

We do it in the roaster every year. We use a stronger, wider spoon (wood spatula) and make sure it gets all the way down to the bottom. And we set a timer to stir every 15 minutes, digging down to the bottom so that it doesn't burn on the bottom. We've found this to work so much better than in the oven because it is much easier to sitr and make a big batch without making a mess.

electric roasters don't have heating elements in the bottom, only the sides so it wouldn't burn on the bottom, only around the sides.
