Really knows his job, I watched another guy who was useless, using a pair of pliers, no way could he fillet skate like this guy.

I live in New Jersey and catch skate often. Until recently I had always thrown them back. I had found a tutorial online that suggested the"boil" method for the skin. it was awful and over-cooked at the end. Not to mention they did not mention the cartilage in the center (I never tried it before and knew nothing about it..) this tutorial is very useful and comprehensive. I will certainly try it again. Thank you!

Brilliant, I have been told it is impossible to skin a skate wing, I am delighted to see the exercise performed doesn't look easy, may have to ruin half a dozen first!

Brilliant video thanks you Duncan. You make it look very easy but I'm sure you have done this many times.............. now all I have to do is skin the skate wings I bought at market this morning.

That's great. Its similar to what I do for Flathead in Australia (different to that of British and US variants of same name). Most of the videos I've seen on cleaning Rays and Skates is more that of just butchering with blunt knives and losing heaps of good meat.

All this time we've been throwing them back. Is it gummy like calamari or octopus? Is it heavy dense like blue marlin? It it lite and mild like flounder or "fluke"? Easiest way to cook it?

I can't peel the skin of southern ray here in the US like that. And off course it fresh catch of the day... it's a lot of work.. so how do you peel the skin so easy, and keep the fish fresh? Or maybe they are small? mines to keep is at least 10lbs.

this is nice :-) would do this with the smaller skates just fine. Now the barndoor skate and the cownose ray, would require a rather lengthy knife, indeed.

I tried that skinning technique on a cow nose ray that I caught a few days ago, but it didn't work out. It was fresh out of the Gulf of Mexico. Do you wait a few days before skinning?

Skate is delicious. I bake it in an oven at 200 degrees for 30 minutes, in foil covered with lemon and spices!

Im watching *The Tunnel* on Amazon prime video, and in the 3rd season they mention "skate wings" and fisherman. Having never heard of skate wings I was curious. I don't know what I expected, but it wasn't stingray meat

i had no idea do not get skate wings here in prince george bc... no ocean near by lots of lakes no skates... well done.....love fish........I love to cook this was very good.. to learn how to do. but no fresh skate here....

Hi - I love the flavor of the skin of skate wings, however, some parts of it have plenty of spikes, and that makes the eating process less enjoyable. How do you remove those nasty spikes off the skin????

it depends on the kind of ray. I'm from Hong Kong, and the ray we get there has a relatively smooth skin that can be cooked in and it has this pleasant texture. After moving to Italy, the ray here is covered in little calcareous spikes that I just must remove. I made a coriander and mango curry and popped the ray in there, I left one piece with skin on and the skin was horrible, it was covered in little hard beads which I assume were the remnants of the rough beads on the skin. So I guess that while in Europe, I have no choice.

I just tried cooking skate for the first time. Out of interest, I tried eating the cartilage (not the really hard "bony" bit at the front though, I cut that off before cooking). I didn't think it was too bad, a small crunch. Is it bad to eat the cartilage? Is it healthy to eat? I'm guessing it's just not considered to be a valuable part of this fish. I didn't see anything wrong with it, though; perhaps useful for a broth or something. Saying that, it was really easy to cook before cutting the cartilage off and then just pull away the flesh with a bone; I imagine this would be less wasteful than filleting it off before cooking.

Sorry, just to correct myself, I think a few fishmongers still sell skate is in the species skate, but skate are an endangered species so they are rarely sold now (I'm not sure if they are, in fact, ever sold.) You can be pretty sure that what your fishmonger calls skate is actually a species of ray.

They are not the same fish. All 'skate' that is sold in fishmongers is a species of ray. Rays are just called skate by fishmongers. There are lots of different species of ray.

I used a fillet knife, it's a lot easier to fillet fish over 5lbs.

Joshua Couling it seemed fairly flexible to me, I'm almost certain its a victorinox filleting knife which is a fairly stiff blade anyway
