Pasta Grandpas join the Grannies in friendly pasta competition! | Pasta Grannies

Everyone's a winner! Every July the village of Mercatello Sul Metauro encourages men to brush up their pasta making skills and take part in a competition. Friends Maria, Lina, Teresa, Daniele and Pasquale share their expertise in this episode.
For the pasta: 3 eggs and 300g 00 flour. For the sauce: 200g 'goletta' or guanciale, or pancetta (cubed), one onion, one large or two small zucchini, salt and black pepper.

Pancetta is pork belly. Goletta is like guanciale; it’s pork cheek. I think that’s what Vicky said.

Yes Tracy is correct, goletta is a local variant of guanciale - cured pork cheek - but goletta has a whole lot of black pepper applied to one surface. It's delicious. 🙂🌺 best wishes, Vicky
