Your videos should come with an excessive mouth-watering warning! Can't wait to try your recipe. Have only discovered capers a few years ago. Where have they been all my life? As far as ricotta, what 'qualities' do you look for when shopping? Is there a brand or region which is a gold standard? Same question about capers. Best wishes to you and family.

Thank you! I like to eat what I cook therefore I'd rather learn how to cook well so I eat well too 🤣 I like ricotta when it's fresh and still warm, that's the juiciest it gets. Of course, I'm from Salento (in Apulia, South of Italy) and I think that's the best ricotta but I've been living outside of Italy for 15 years now, so I'm ready to accept compromise. Capers...... Pretty much the same answer: they grow spontaneously in Salento, and I like the small ones VS the big ones! It really depends where you live and what type of food you have access to (more or less easily...).
