Welcome to a very romantic gothic victorian pastel episode. This week I’m making a pastel coffin cake for spooky season or anytime you may feel like celebrating going gentle into that good night. I’m using my gluten-free chocolate cake recipe and dairy-free swiss meringue buttercream. But honestly you could use boxed. It would still be very good. I use vintage cake decorating techniques to give it that pastel vintage victorian look that I love. Enjoy and rest in peace.

Ingredients
1 cake recipe baked in 9x13 pan
vanilla: • dairy-free vanilla but...
chocolate: • fudgy gluten-free choc...
1 batch vanilla buttercream
my recipe here: • best ever vanilla cake...
6 cookies, crumbled (I did homemade miso chocolate chip, but store bought is fine)
To cut coffin shape:
1. measure and mark the cake 3 inches down from top (width-wise)
2. measure 1.5 inches in from the top of the cake (length-wise)
3. match these two measurements are cut equal portions of the corners off the top of the cake
4. measure 2.5 inches in from the bottom of the cake (length wise)
5. match this measurement to your previous mark across the cake (width wise) and cut to complete the coffin shape.
