I also should have mentioned that you can make the grano, the dough and the rest of the filling in the same day. As long as the grano is cooked and cooled, you can make the whole thing and then just let it cool overnight.

I have to admit that this is by far the best recipe I've used so far and I've been making this dessert a long time and have tried many recipes. This one is the creamiest and has the perfect texture. The crust is perfect. The only additions I made was I added both lemon and orange zest to the pasta frolla (crust) and added 5 ml’s of orange blossom water and 5 ml’s of millefiori to the batter and orange and lemon zest to the grano while cooking. We all have our additions to make it our own. Don't be intimidated by this delicious dessert and cheat yourself out of the best thing you ever ate. It's not difficult to make, just time consuming. Go for it you'll be making it from now on! Thanks Laura!

My issue with this recipe, is that she doesn’t ACTUALLY give you the exact measurement of how much butter, sugar, milk etc. she uses.

My Neopolitan family makes the grain pie the same way. However, my other side are Northern Italians and they make this using arborio rice and golden raisins instead of the grano cotto and candied citron. Both are equally delicious, but i do orefer the grano cotto one. Great traditional recipe!

(I will, like your Grandmother & Mother, use lard for the piecrust - from grass fed animals and I will look up the "grano" to make that myself...I imagine it can be made at home!) I'm sure it will be worth every minute of preparation! Mille grazie!

I have a similar recipe from my grandmother but it does not have the grano cotto in it. She also made a rice pie. She came here in the early part of the 1900's and I'm wondering if she could not get it so she started to leave it out. She passed away when I was one and a half and I only have one aunt left to ask and she is 94. But you are right about the dough, it is difficult to work with. Now that is about the same.

Laura, I just tried to look up grano cotto and if was a recipe for it so that you wouldn't have to buy it that expensive in the US. As far as I found out from ingredients lists of grano cotto, it's just cooked wheat berries in salt water as far as I could tell and you can find recipes for cooked wheat berries on many sites. Then you only have to order the millefiori.

This was a wonderful pie. I made one modification to the recipe by adding 2 lbs. of ricotta instead of what the recipe called for. It made the pie thicker and creamier. I found the Vanillina and the Mille Fiore on Amazon. The Mille Fiore smelled like those little orange soft candies in the shape of peanuts.

Hey Laura! I'm a big fan of yours. I'm Italian and before today, I must admit I wasn't so sure you were able to talk Italian very well. But gosh, I laughed loud with great satisfaction when you said the sentence for the Napolitans. Apologies for all other readers but I'm turning to Italian now... Con quella frase in napoletano hai guadagnato 1000 punti, sei stata molto simpatica e hai fatto trasparire l'amore e la gioia di vivere che contraddistingue una vera napoletana! Grazie! E buona Pasqua!
