This recipe can make 20 pieces of pastry moon cake with pork
配方可以做20个鲜肉月饼
1. Water oil dough 水油面团:
250g All-purpose flour 中筋面粉 1 cup+1/2 cup (可以用食用油或者黄油代替)
20g Sugar 糖 1+1/2tbsp
2g Salt 盐 1/4 tsp
10g Maltose 麦芽糖(上色用,没有的话可不加)
75g Lard 猪油 2.5oz
130g Hot Water(40°C-60°C) 热水(40°C-60°C) 130ml
2. Pastry dough油酥面团:
180g All-purpose flour 中筋面粉 1cup+1/4cup
90g Lard 猪油 3oz (100g Unsalted butter or 90g Corn oil)
3. Filling馅儿料:
450g Ground pork 猪肉末 1lb
1/2 tsp Salt 盐
1/2tsp Dark soy sauce 老抽(老抽可以减量)
1/2tbsp Soy sauce 生抽
1/2tbsp Sugar 糖
1/8tsp White pepper 胡椒粉
1tbsp Corn starch 玉米淀粉
1tsp Oyster sauce 蚝油
60g Picked mustard 榨菜 2oz
4. Ginger Water葱姜水:
50g Water 水 50ml
20g Green onion 葱
10g Ground Ginger 姜末
5. decoration装饰:
Wood stamp 福字印章 3.5cm
Red food coloring 红色食用色素
Preheat the Oven 190°C(380℉), baking for 25 minutes
