A celebration of Knepp’s Wild Range meat and organic Market Garden.

Our free-roaming herds of cattle, pigs, ponies, red and fallow deer at Knepp play a vital role in restoring the soil and creating new habitat for wildlife. While our aim with rewilding is to allow nature to take the driving seat, we do intervene in one respect. Without apex predators, we need to limit the animals to a number that works best for biodiversity. This provides us with organic, free-roaming, pasture-fed meat - to our minds, the healthiest, most ethical meat there is. It is also, unsurprisingly, delicious. We are proud to showcase Knepp Wild Range meat in our new café and restaurant, the Wilding Kitchen, and in our shop.
We are also keen to be part of the movement for eating meat in moderation. A plant-based diet is vitally important for a sustainable future, and we are thrilled to introduce our organic, nature-friendly Market Garden, created in 2021, just a step from the Wilding Kitchen, where we grow vegetables, fruit and salad using regenerative principles.
Your safari begins in the new Wilding Kitchen in a beautiful converted Sussex barn, where you’ll be welcomed with coffee and homemade brownies and an introduction to the day from Molly, Knepp’s Head of Natural Capital. Then head out in safari vehicles to meet our free-roaming animals and Pat, our Head Stockman. Ian, our Head Butcher, will then show you our sustainable, state-of-the-art, waste-free butchery, to see how we process our meat with respect and precision, with a chance to sample some of our Wild Range charcuterie.
Then it is back to the Wilding Kitchen to enjoy a delicious seasonal lunch prepared by Bradley our wonderful Head Chef, and his team.
To round off the day, our Market Gardeners, Signe and Rosanna will collect you from lunch to show you the stunning and prolific Market Garden, the source of much of the produce you have been eating, and explain their sustainable system of growing beautiful fruit and vegetables.
There may be a little walking involved on the safari and around the Market Garden, so do bring appropriate footwear and dress for the weather. Vegans and vegetarians are warmly welcomed, with an option not to tour the butchery - though we hope they would find it interesting and reassuring.

I’m a rural estate manager in Scotland and really love what’s happening at Knepp and hopeful for a visit sometime to learn a few lessons for the management of our estate. As a somewhat more traditional countryman, I’m pleased that Knepp isn’t totally vegan hippie in its approach, as that would be quite off-putting to me. Grass-fed livestock, wild game and venison eaten in moderation can certainly form a healthy part of the human diet. Lots of wee market gardens dotted around the countryside would be fantastic too.
