For anyone who is looking for the recipe:- 250g/9oz plain wholemeal flour 250g/9oz plain white flour 1 tsp bicarbonate of soda 1 tsp salt 420ml/15fl oz buttermilk extra flour for dusting Preheat oven to 200C/400F/GM6 Mix all dry ingredients together in a bowl. Add the buttermilk. Alternative a). Half yoghurt half milk mixture Alternative b). 420ml full fat milk stirred in either 1 tsp lemon juice or 1 tsp white vinegar. Pour into the dry ingredients as soon as the milk curdles with the acid. Do not overwork your dough and put it straight in the oven after making a cross cut. No need to rest the dough. Bake for 30 minutes. Tap the base of your loaf for that hollow sound to ensure it has cooked through. Hope this helps. Happy baking!

If you don't have any buttermilk on hand, try using milk to which you have added the juice of one lemon. This will curdle the milk in two or three minutes. This will have the same effect as buttermilk does. Just an idea!

I second this! If it's too bothersome to use lemon juice, you can also use vinegar. The usual amount is 1 cup milk + 1tbsp lemon juice/vinegar and wait 10 mins. I do this all the time. I think he didn't give good advice when he said you could make it with just milk, he should've said yoghurt as it is naturally acidic. Although some yoghurts can be too thick, in which case, you should go for the low fat, watery kind.

I don't know where he learned that but that's a mess of a soda bread. Traditionally it's not hacked to bits going into the oven and my granny wrapped her sodas in a clean teacloth and stood it sideways on the dresser to get a softer crust.

I really like Paul Hollywood. BUT... I'm not sure how many traditional soda bread makers would agree with how heavy handed he was bringing that together... The less you work it the lighter it will be. Gosh he actually kneaded it a bit. That would never be allowed! I've never heard of any traditional cooks resting it either. I'll try that but usually buttermilk and soda combos work best when cooked straight away.

I agree. He made a complete balls of that bread. It would have turned out very tight and dense in texture due to over kneading. Very surpised he did that as I find him to be a top class baker.

Get the ingredients together as fast as possible. From mixing to pre-heated oven in about four minutes. None of this mucking around with kneading. & the cut was a bit too deep.

Handled it way to much and he cut it in four parts Noooooo. Fool proof method... Use a tin, yes a tin.... One tin wholemeal flour, one tin self raising flour, one tin buttermilk, tablespoon salt, 2 tablespoons bicarbonate soda... For white soda bread,2 tins self raising flour and 150 g currants

I always used buttermilk in making biscuits because it made them turn out more lighter and fluffier, also moist instead of dry! Paul you make cooking so interesting and also keeps it alive! I got Mary Berry’s book for Christmas and her book says you can use yogurt+milk if you don’t have buttermilk. However, I used milk with vinegar per the internet and it worked fine. This bread to me just tastes like biscuits. (USA here biscuit isn’t cookie it’s a round tiny bread we put sausage gravy on)

absolutely do not make this way, the soda and the salt need to be mixed into the dry flour so that you will not run the possibility of getting a pocket of soda which will be horrible tasting and looking. the recipe is good though but take a minute. One other thing to mention the less handling the better, get it mixed turn out on floured board shape into nice fat bun quickly, dont cut all the way down but rather about half way will give you a better loaf. I'd put my soda bread up against his any day LOL

I can't believe he didn't even distribute the salt and the bicarbonate properly before adding the buttermilk. That will just end up with sections are too salty and too soapy (due to the bicarbonate). Another rule of making soda bread is that you do minimal knead on it because the carbon dioxide will just escape and you end up with dense bread. I guess it's fine if you have something you made earlier...

I'm a big fan of Pauls, I don't agree with his overall shape of the bread though, I followed this recipe yesterday and in Ireland, I've never seen anyone shape or cut it that way. Its too thick...you have to flatten it down a bit into a wheel shape, don't worry it'll puff up a bit, but with Paul's way its already a ball shape so it puffs up too much and then after cutting it all the way down, by the time its out of the oven the shape is kind of unapproachable. Just give it a nice flatter disc shape, because it wont cook properly in a half an hour with that shape, it looks more like a crown when its done. He's the master, but I'm just saying, the bread cooks better my way and looks nicer.

1. mistake - you should mix the dry ingredients before putting in the buttermilk. 2. mistake - do not knead the dough, just combine the ingredients with the hand quickly and shape a round form, it shouldn't be perfectly round and even. (and yes, use your hands, they won't get "dirty", it's not dirt!!)

Generally no. You need the acidity of buttermilk to react with the soda to leaven the bread. If you don't have buttermilk, you can use normal whole milk with some lemon juice or vinegar added to it and leave it for five minutes.

If its cracking, the mixture might be too dry. Add extra milk, but only a capful at a time. Too much moisture will result in a very sticky mixture. Ideally, when the mixture is right it should hold together, but not stick to your hands too much. If it's like glue, it's got too much moisture.

To make buttermilk mix together natural yogurt and milk. My irish folks put currents in it I do too. I never cut it up before baking. The irish tradition is cut a cross on top. This is to let out the fairies or ward of evil spirits. I made soda bread tonight and all you need is to bake it for 30 minites.

Paul Hollywood is a "Master Baker", TV Celeb etc and certainly know's more about baking than me..But with that said,my(late) parents were from Cahirciveen,County Kerry(Ire) and I wouldn't attempt to estimate how many times I saw my mom bake Irish Soda Bread(sometimes she referred to it as Current Bread)And she usually made some Plain,Wholemeal and Raisen or Blackcurrants and I can assure u didn't use Mr Hollywood's method nor achieve his end result--Thank goodness!..This ain't Traditional Irish Soda bread..Maybe a traditional "Scouser Bread".👍

Same thing happened to me! Dense as heck 😅 I had to improve buttermilk with milk/vinegar. Maybe my baking soda was too old, or I didn't cut it deep enough. Still OK with some stew but not something I'd want to replicate in purpose.

Acid comes from the buttermilk, and its called soda bread because bread soda is used and not baking powder. Wouldn't be soda bread with baking powder, and the baking powder would not react to the buttermilk.

Joanne Vargas ..It's just that he's a Master Baker who critique's people for a living and obviously know's his business,but on this occasion he's way off the Mark..I think Irish Bakers would give him a 6/10..Me included..

Mike A. ..So many of these Celebs are such Whites,always trying to make a Buck and rgey're exactly Skint!..I was just a little disappointed in his version of Soda Bread..There are a few Videos of Irish Women making it,which are far more accurate and Traditional,and that is a important factor here(as far as I'm concerned,without meaning to jump on my Soapbox)But him having the "Master Baker"title I expected a little better..

Jerry Shea I mean I know nothing about traditional baking, and was simply trying to find a simpler bread to bake to get into it (good thing to learn, I figure). I'm Irish with Hungarian homage, so I was never exposed to Irish traditions. So, pardon me if I say something ignorant. But what I thought was sad is: I know next to nothing but I could tell you you can't substitute buttermilk with regular milk. It's supposed to get a chemical reaction going, and buttermilk is acidic which reacts with the baking soda/sodium bicarbonate. Basic chemistry. And this guy's pushing a book smh about keeping the tradition alive? Wtf

Mike A. ..No problem..Being born in London,Irish Parents from🍀 County Kerry(serious micks Of Ireland)and my bruv has a friend who's Dad was Hungarian and Mom Irish..What a Combo..But back on point..Ur correct,u can Sub with slightly off Milk,a plain Yoghurt,or some Lemon juice or a Little Vinegar in Milk..But as u said regular milk will only produce Regular Bread..So his version was a poor imitation .

Are we supposed to guess the measurements 🤔 oh I get it this is really just an advert, in order for us to get the recipe we have to buy your book..🙄....cheaper to just buy a loaf or go on Pinterest and find a gazillion TOTALLY FREE soda bread recipes with completely FREE instructions. 🤨

I was thinking exactly the same about a minute before reading this. I was wondering if this was an advert for grooming products, or for his book or, for both. Agree with the earlier reader. The cut was too deep, making the bread drier that it needed to be.

Leyla Pedersen ..Yep somewhat vague from the Great man from the Brit baking show..It varies a little,some people use 400ml,but my Mom(who was Irish unlike this Scouser)would use about a Quart or at least 2/3 Cups of Buttermilk..I wasn't impressed with his effort,downright underwhelming in fact..Anyway greetings from the LondonIrish🍀 in Vegas..
