My grandma’s birthday was on Christmas Day. Over the course of 10 years she had 5 strokes and her health and memory declined. The last few years of her life I made her this coconut cake for her birthday. It was her favorite dessert and this recipe in particular she loved the most. Her last Christmas with us, she had the most coherent day she had had in years. We enjoyed this cake and she told us stories of her and my grandfather. She also kept telling me repeatedly how amazing this cake was. I’m rambling, but I have such fond memories of this cake and times with my grandmother. She looked forward to it every year!

I’ve made Jamie’s Coconut Cake for my son’s birthday for probably 10 years now. He turned 39 this February and he still requested that cake. I pretty much make it without looking at the recipe now. Everyone that has tasted this cake just loves it. Thank you Paula for sharing.

Hi Ms. Paula!!!👋🏽 What an amazing cake to start this early Sunday morning off with!!! Yum!!!😋 Coconut Cake is my favorite cake too.❤️ My Big Mama used to make it for holidays and I remember her just making it for me. Sometimes she would use her homemade peach jelly for the filing and then that same icing and coconut all over. Lord, I miss her so much! I'm so grateful for the time God gave me with her and my mama. That's such a pretty coconut cake and I love how you decorated it with the holly and the holly berries. My Granny used to make a seven layer coconut cake every Christmas. She would put cherries on top of it . She would set it in her formal dining room and she'd have her dining room table all fixed up for Christmas. She would 1st lay a red tablecloth on her dining room table and then she'd drape it with a white lacy dining room tablecloth . Then she would put all of her Christmas desserts out on the table, but the Coconut cake was the star of that table. lol !! 😉 I miss that so much !! Things like that isn't just about the food ... it's about making memories too . Thank you Paula, Teresa, and Eddie !! P.S. You look beautiful Miss Paula !! Merry Christmas to you all !! ❤😘

My Momma loves Coconut cake, she always talks about a lady who’s husband worked with my daddy, she made a wonderful Coconut cake. I’m gonna make this Coconut cake for our Christmas dinner and I know she’s just gonna love it, Oh my goodness, what a beautiful cake. I'm in rural Md. Ive had holly in my yards prior to moving here. There is a bizarre holly on the side of my house that is so bold & spiky it has bark on the base. The thing has yellow weird flowers on top. It's at least 6 feet tall & 3 feet wide. It's a BEAST! Luckily I can avoid it but boy if you try to work around it I swear it'll stab you! It's like something out of a horror movie! Point being - if you have them you sure can't let them go rouge or they turn on you!😂

Oh my gosh, that coconut cake looks delicious! As an added bonus, I was laughing right out loud watching Paula slicing the cake and plating it at the end of the show. Absolutely hilarious when she says, “She likes that she can get small slices cutting it this way” and the third piece she cuts is big enough for three people. LOL 😆

This reminds of my late mom. Coconut cake was her choice of cake for her birthdays. Lost her in 2019. I miss her. ❤

I LOVED watching this! My mother makes this cake for my birthday every year, and it is DELICIOUS!!! But my favorite part was the cutting of the cake. My materanl grandmother cut her cakes the same way Ms. Paula does, but my paternal grandmother always cut hers in wedges...the number of wedges was based on the number of people at the meal. My mother tells a precious story of the first time she had cake at my Daddy's house. It was his birthday, and when my grandmother cut the cake, my mother almost died. She said she had never been served such a large piece of cake in her life, and she didn't know how in the world she was going to eat it all, but she didn't want to offend my grandmother. Fortunately, my grandfather came to her rescue, and finished her piece of cake for her. 😅

That is pretty much the recipe my mother used back in the 1950s. But she did the grated coconut from real coconuts. It was a laborious process … I'll be using store bought!

My Mom used to make this cake every year. Instead of the 7-minute icing, she would reserve a cup of the filling mixture and mix that with a large container of Cool Whip to frost the cake 🍰. We would then decorate the top with green and red maraschino cherries 🍒. It was divine, and I don’t even LIKE coconut but I loved that cake.

Did you let it set in the refrigerator 3 days? Just curious if it is worth doing that. I'm assuming it makes it more moist. Thank you.

My Mom made the best. Paula I haven’t had one,like hers in 15 years. People have tried, but cant get the consistency right on 7 minute icing. My Mom would say its threading a needle, when holding up. She did it with the icing between the layers. I was drooling watching you. Im 62 and never could do this cake. Thank you.

Love it!!. I've made this cake a few times but half the height, coconut slightly roasted. Served under a mistletoe of course! So yummy!!

My favorite cake is the fresh coconut cake. My grandmother made it every year at Christmas and then my mother did. I have made it but it has been years. The cake had coconut milk in it and the frosting was the divinity icing with coconut on top. Not only did she make it at Christmas but she made it for my mother’s and my birthday which is January 19. The birthday cake also had one pink layer.

I had forgotten about this. I made this cake for a friend of mine years ago.. i'll guess early 2000's i saw it on a show when you made it special for your son's birthday. My friend wanted a tie dyed cake for her birthday... i had sheets of wax paper all over my counter using food coloring to dye the coconut and spreading it to dry. Then "tie dyed" the cake. It was the first cake i ever made from scratch. Soooo easy, sooooo delicious.. and it basically is self decorating... perfect for the baking challenged like me! So glad i found this recipe again!

My own recipe. And, I love the extra vanilla. it's absolutely beautiful. However, I loaned my recipe out without taking the time to run a copy and it was lost. Now, I have your recipe. Ms Paula, just know I watch everything that you host & I had the chance to visit "The Lady & Sons" restaurant a few years back. I still remember that experience to this day & I'm now 72 yrs old!!

I make a coconut cake at Christmas using cake flour and I separate the eggs. I have found the crumb of the cake is always beautiful when I beat the the egg whites and fold them in at the end. I use two coconuts and my husband opens, “peels” and grates and coconuts. My filling is made with the milk from the coconuts and the coconut and I cook it on the stove. I use 7-minute icing and put coconut all around❤️ You have made me hungry❣️

This is how I make my coconut poke cake 😊 and it's also how my mama makes her 3 day coconut cake . But she's dead set on that 3 days 72 hours. She starts it at the time we normally end with our thanksgiving dinner 😊

I make my coconut cake with two real coconuts. My husband grates the coconut on my grandmother’s wire mesh grater. We use the milk out of the coconuts instead of plain milk in the 1/2/3/4 cake. I also take some of the coconut milk and brush it on each layer. I make a thicker filling(no sour cream, I used the coconut milk) and then ice the cake with 7 minute icing and press coconut all over.

You start with flour and in with flour Paula because you want to stabilize the gluten development. You don't want the gluten to develop in a cake like you do on a bread best answer I could find.

Hi Paula! I want to tell you about my Mother's Coconut Cake Recipe. I've never seen or heard of it before. She would Take a Angel Food Cake poke holes in it and put juice of 2 large oranges between 3 layers. Then Ice it with the 7 min frosting. Boy is it good! I made it this Christmas for my family and tasting it brought back so many of her sweet memories. It felt like she was near!

Id put in 1 TBSP rum flavoring into that cake, instead of vanilla and also I would add crushed pineapple and of course add 1 tsp coconut flavoring to the icing as well. And I wonder if buttermilk would taste good instead of real milk?

My mother always done this cake every Easter she would dye the coconut green make nests with it and add this speckled jelly beans then she would take peeps and put in each nest it was so cute :D
