Paw Paw's bedrock recipe of 1 quart juice, 1 cup sugar, 1/4 teaspoon bread yeast is the start of a beautiful relationship with winemaking - he gives power to the people to create!
@blakkat5317 жыл бұрын
PawPaw is absolutely right, this is some goooood stuff. I did it on the sneak because I knew the first time out of the chute my wife would doubt the process as well as the result (she doesn't drink). 18 days passed and it was time to test, and I pour her a sniff, told her it was Combucha. "Yum!" she says. Now she is supportive and even coming up with ideas for new concoctions. The downside: I can't keep it all to myself, and I won't have any back stock. For those of you that can't find pure juice at the grocer, why not make your own? Juicers are commercially available in the appliance section of most department stores, or you could mash and strain your stuff by hand, and go from there. Find a buddy with a fruit tree and offer to do some trade...
@stewynofly5 жыл бұрын
One caveat about using your own juice. Pawpaw's method is fairly sterile since he uses juice from a sealed bottle. The chance of contamination increases dramatically when you juice your own fruit. My recommendation if you choose to try that is add one crushed Camden tablet to kill anything foreign then wait 24 hrs before adding your yeast. I am sure Pawpaw will say he has not needed the Camden( or Campden) tablets in the past (sodium metabisulfite) but it would greatly improved your odds of success. If you do it exactly as Pawpaw shows you won't need it.

First things first. THANK YOU PAW PAW!!! When I first stumbled on your video on making homemade wine in 40 seconds, it reminded me of home my Grandfather (who came here from Germany at 16 years old) used to make wine in his basement in St Louis when I was a kid. Never thought much about it until I saw your video. Well over the years, my wife and I have developed a love for wine, (when I was stationed in Germany with the Air Force) but it always cost too much for good wine. I've made 5 1/2 gallon bottles now and they've been some of the best wine I have ever tasted. Except for the Apple... We did not care for the taste at all. Other than that, it's been awesome, especially the "white grape peach"! It turned out so well, I've got 4 more brewing now! LOL. Thanks again for helping me to reconnect with a long forgotten family tradition. Blessings!

Pawpaw you will not believe this! you need to try ! if you don't thats ok but I was trying to make apple cider vinegar did everything I was supposed to but because I didn't have a big jar I did it in a small one ,well with not being so smart I used to mush sugar for the size jar . So today I go and take 3 tablespoons [after 3 weeks waiting] of it just like the doctor told to lose weight, let you if I lost later. But the feeling that it gave me was warm tingly and no pain (and I have RA) it was bubbly and oh so good. I think I made champagne. Well I don't know about losing weight but it makes me feel really good.

Hey Mr. Bob. I did it the same way. Instead of shaking the juice to dissolve the sugar, I poured it all into a large pitcher. And like you I had extra from a couple different kinds. Which I promptly mixed all into a wild blend, lol. I 'll let you know how my combo wins turns out after about a month or so. Thanks brother for sharing this with folks. One of my favorites is using water, sugar and yeast. I call it my "Peculiar Wine" Mix anything that is NOT sweetened with it for an alcoholic drink. A shot of lemon juice over ice and then the "wine" and you have instant hard lemonade.
@HitchHikersBlues6 жыл бұрын
Sounds delicious man, i will be trying that. I was watching another video on that old medieval drink, Mead. It's made with Honey. Again, it seems to be just honey water and yeast. I made Welch's grape from the store bottle. Its 5/1/2017 and started mine on 4/18/2017 and here in Kentucky we have had mild to around 89 degree weather. I used a balloon and its deflated after working off hard. I have some Apple I started on the same date and is still working off well but I grounded up about 6 apples and strained out the juice and put it in with it. Can't wait to taste it. My grape, I used an instant fast active yeast I don't know if that rushed the process or not, but last night I siphoned it out and put it back in the jug after washing it out real good. I used 4 cups of sugar in my gallon jug and no added water for my grape and it turned out just a little to sweet but still good. It tastes pretty stout but with a little hint of harshness, but should go away with age. I'm going to drink a few glasses tonight and see how much of a kick its got. I have done this years ago but never worked a batch off that fast in 11 days total. I have Dragoon Fruit, Mixed Berry, and Apple working off in my shed and on my next batch I'm going to try some of that fancy wine yeast everyone is going on about just for shits and giggles.
@whiteheathen59087 жыл бұрын
I used half Fast Active instant yeast on the Apple and Half original active dry yeast and its still working off. I made 2 gallon jugs of Welch's grape and used only the Fast Active Instant and they are done working after 11 days. I still have one gallon still in my shed and I took out a gallon to mess with last night.

Ok, so... home made apple wine. I already got hollered at by the old man for deviation from the plan, but I'm used to getting hollered a,t. Followed the directions for the Apple wine , almost. I used the whole 2 quarts and the recommended amount of sugar. Mixed it all in a large soda bottle from the dollar store, sanitized of course. I mixed the sugar, the yeast ( which by the way is two years old, frozen, and is still fine) Put it inq a box I happen to have that let's the bottle stand up. Loosened the cap to let gasses out. Smelled it every few days, at first it smelled " yeasty" After a week and a half it smelled " yeasty, yet boozy" After three weeks, when the fruit flies were really kind of aggravating me, it just smelled boozy. Four weeks , settled out somewhat, fermentation had stopped, but not clearing. Strained it thru a coffee filter in a funnel, got somewhat clearer . Another four days, top clear, rest cloudy. Thinking Ran the juice through a Sawyer Mini filter to make it crystal clear. The filter attached to the top of the bottle and gravity fed into a new bottle. Quart and a half of some very potent apple ( kinda) wine. Very boozy. Kind of reminds me of a Canadian beer, specifically Molsen Max Ice. You can definitely tell it's an alcoholic beverage. Good job Paw Paw, thanks for the lesson. A week and a half in, I started a gallon of alcohol with a gallon jug of Crystal Geyser water for the " most unusual wine" recipe. Got another week and a half to go. Looking forward to it. :-))

I've made 3 liters, and there is an easy mnemonic. 3 liters juice, 3 cups sugar, 3 weeks to get ready. 3 times 7 days, when you do 3 times 7 it's also the ideal temperature during that period. Strange enough 3/7 teaspoon yeast per liter seems to be a good value :)

In my house at the moment my batch would only be a few days, its very hot in here. well this is going down to 4-5 % ABV. with no added sugar.

hey pawpaw i been experimenting with the recipe you shared i took some apple juice and instead of regular sugar i used brown sugar and after the fermentation i froze it over night then turned the bottle over a clean jar and let it drain the liquid out until the ice was almost white but the wine that came out in the jar was wow strong about 60 proof and talk about good warning only sip it or the hangover will be unforgettable he he try it you might like it too
