Woah, I wish I had my 1200 with me. I had no idea an Amiga would still be this useful in this day and age. And you could easily draw on a CRT, too ;)

If you change your rom extension to .sgx, mednafen will run it under SGX emulation. No need to force it in the config file. It's only really needed when you are making homebrew SGX CD games (because it doesn't check the extension of the sys card).

A great program I would recommend for making sprites is: YY-CHR. My only minor gripe with the program is that it doesn't save any preferences you created in the program, nor does it read the file you just created (you have to use the drop-down option in the open option to access it which is pretty tedious) I hope that this helped contribute...

As a side note, Think of a PC-Engine as half NES (CPU wise) and half SNES (Graphics wise), Not much to it!

You don't need an Amiga emulator and Deluxe Paint, There's other options: For DOS: Download Deluxe Paint II from phatcode.net For Windows or Linux: Download Gimp 2.0 (Open source) from gimp.org

I do like these videos a lot, since i'm interested in pce asm programming. but as some constructive criticism, they tend to get a bit rambling and long. let's get to the actual programming already, we spent way too much time looking at the palette problem in photoshop and the amiga emu.
