You're the first KZbinr I've found who uses minute tapioca to thicken pies! I'm 62 years old, and didn't learn that until about 10;years ago, from my father inlaws second wife, after his first wife passed away. Both of his wives were/are the best homemakers, cooks, bakers, canners, and keep the home immaculate! Ruth, his second wife, told me how she thickens pies, and I was surprised more homemakers don't do that, since tapioca doesn't gum up like flour or corn starch. Do you think tapioca is safe to use to can pie filling? Or should homemakers just can peaches, and add tapioca and spices, when they go to make the pie? My husband loves to use home canned peaches and the juice they make, over shortcake, a family recipe that tastes a lot like the cake-like topping on many cobblers. I have some peaches to preserve, and he asked me not to throw away any juice the peaches make, as if I would, because he wanted it for shortcake. I want it to make peach jelly!

Just made a Peach Pie from your recipe using frozen fruit and I am anxious to try it. It looks and smells amazing and the pie dough handled beautifully. My 96 year old mother in law is coming for dinner and it's her favorite. Also appreciated your tutorial.....it was a very knowledgable and effective presentation. Thank You!!

Yeah same, I just sort of made a guess based on the video though. It’s impossible to guess the measurements for the pie dough but this is what I guessed from the pie filling: - 852g frozen peaches (3 bags has 284g each) - 1/2 cup tapioca - 1 cup sugar - a pinch of salt * for pie dough, there’s a lot of great recipes out there anyway, so it’s not a big deal!

Can the peaches be actually frozen when you pour them into the shell, after the sugar, spices , and cornstarch?? I used frozen peaches that I thawed for an hour, and emptied the juice before pouring into pan, but the peaches came out a little runny. Any advice or suggestions? I appreciate it

This video focused on piecrust which is fine. I came looking for what to put in my filling.... especially how much sugar. So im still in the dark... t tsps or 2 cups... i dont know!
