When I cook a Mancunian paella I add the rice after the meat and veg are added and stir it aound a little, so the rice gets coated with the juices and seperates well. Then I add the stock (not just water). A little dash of turmuric also helps liven the colour up a bit if saffron is out of yer budget. Yours looked lovely though. Keith, Manchester.
