Lux laser is another true one shot ability. I can't think of any others. Rengar used to be able to literally one-shot but I don't know if it's possible anymore.

depending on whether you want to count it as a one shot, some of the ults that deal multiple waves of damage like MF R, viktor R, kennen R, can kill completely on their own if someone gets caught in the whole thing
