Kibble is a bit faster when taming, and a crossbow with narcotic arrows is also a little faster to knock out. Of course the higher level the bird is, the longer it needs to stay knocked out. So that means a bit more narcotic. They are great at fishing, so piranha is not much of a nuisance since they will farm those pesky fish. If you have a fishing pole and bait, you can fish while riding them after landing on water.

how do you make the saddle for it? what level do you need to be?

It unlocks at level 43 I think.

They can land on the water, but as far as I know they can't dive sadly. Though I gotta say that would be awesome.
